Title: very easy pavlova

I had 2 eggwhites left from yesterday and i googled 2 egg Pavlova
This is what i found on taste.com
 2 egg whites
1½ cups sugar  i used 1/14 cups
½ teaspoon vanilla
1 teaspoon cornflour
1 teaspoon vinegar
4 tablespoons boiling water
Method
   Place all ingredients in a small bowl and mix on high speed for 15 minutes. i did 15 mins with the butterfly in
   Prepare Pavlova tray with foil and non-stick baking paper.
   Spread mixture onto prepared tray in a 20 cm diameter circle.
   Bake at 180°C for 10 minutes.
   Reduce heat to 150°C, then bake for a further 45 minutes.
   Top or fill with cream and fruit such as strawberries and passionfruit

Well, you can see it didn’t work for me  in the TM . i did mix it a further 5 mins , with an old hand held mixer  i had to stop i could see smoke coming out of it. :o

Just had a piece its very yummy   and i will be making it again when i get a hands free mixer

Uni, did you use 37o speed 3 Uni to start off with in the TMX before adding the sugar very slowly?
If you had topped it with cream and fruit as it was, it would have been fine - even the most successful pavlova will have cracks in it but they can be covered up with decorating.

no i didnt , i wanted to try this recipe the way it is, just throw everything at once .it should work with a hands free mixer

I've got two egg whites in the freezer at the moment just waiting to be used - looks like fate has stepped in!  I haven't made a pavlova for so many years I can't remember when I made my last one.

Because DH can't have cream (can't imagine a pav. without cream!) I'm thinking I'll have to experiment with the topping - lots of puree'd mango perhaps?  Must look at Quirky Jo's blog to see what her suggestions are.

How about mascarpone with fruit on top? I have a pavlova roll recipe I want to try that uses that with berries on top.

My DH doesn't eat cream we just use custard and fruit

Thanks Cookie and Deeau, unfortunately the problem isn't the cream - he's got a lactose intolerance, but thanks so much for your ideas.

Fundj,  this is the recipe that i have made for years.  It is a beauty.  Need a standard mixer, like a Kenwood.  Just bung every thing in and let it rip.  My recipe is double.

its very very crispy on the outside and soft like marshmallow on the inside

I have been making mine like this also, all the hype on adding your sugar so slowly and it really doesn't matter.

I've been wondering if I should get rid of my Kenwood Mixer.  Obviously not.  Must have a go at this, I have trouble getting the outside of my pavs to crisp up.

made individual pavlovas this morning with a few changes to the recipe


 i used   3/4  of a cup of sugar and used cream of tartar instead of the vinegar + i heated the egg whites for 1 1/2 mins on 37 soft speed

MJ why not freeze the eggwhites
