Title: Turkish Delight in TMX?

Hi

I have searched the site and I can't find a turkish delight recipe.  I found a few on the internet that involve lots of stirring and a sugar thermometer (no thanks)!   I did find a microwave recipe that looks quite good, but makes a truckload.  I thought I might halve it and try in the TMX at varoma temp on spoon speed.  Will this be hot enough?    Before I go ahead, does anyone have a TMX recipe or any suggestions?

I don't believe in fake sugar or low fat (everything in moderation) but I'll try it with real sugar - maybe some rapadura would work ok?    I'll give it a go and report back   :D

I'm all for real sugar too Stephanie - you do the conversion and then I'll be able to make Mum some  ;D ;D

I just made turkish delight and it worked perfectly! It's an authentic recipe - real sugar, no gelatine. I'll post the recipe tomorrow once i've cut it up and taken some photos

Hi Everyone. Thanks so much for the lovely welcome!

Here's the recipe!


Turkish delight (makes about 40 large pieces)

1L water
900g sugar
225g cornstarch (cornflour made from corn)
20mL rosewater (or whatever flavour you like)
10mL lemon juice
6.5g cream of tartar
red or pink food colour

To coat
60g cornstarch
225g pure icing sugar.

In a heavy based saucepan place 250ml water, sugar and lemon juice and heat until the mix reaches soft ball stage (about 115*C). Do not stir.

While this is happening place butterfly attachment into Thermomix bowl and add cornstarch and cream of tartar. Set time to 5 mins, temperature varoma, speed 2 and gradually add in remaining water ensuring no lumps are formed. At the end of this time it should be boiling and a thick paste should have formed (looks like clag!)

Set time to 60 mins, temperature 80, speed 2 and slowly pour in sugar syrup. In the meantime line a 20cm square tin with clingwrap. When the time is almost up (1 minute left) add rosewater and a drop of food colouring.

Quickly pour mixture into tin and smooth as fast as possible. It will set quite quickly. Allow to cool to room temperature then cover with cling film and leave to cool overnight.

Mix together coating ingredients.  Unwrap turkish delight and cut into squares. I found my knife cut through it easily with no sticking but if it starts to stick you can oil your knife. Toss pieces in coating mixture and place in an airtight container lined with greaseproof paper and sprinkled with the coating mixture.

Just to add - i found that my icing sugar coating dissolved into the turkish delight after awhile so i'd advise storing the turkish delight uncoated and only coat prior to serving.

Thanks sares, I have everything I need except the cornstarch - luckily I picked up a big bottle of rosewater when I was out the other day.  Didn't know what I wanted it for but I will find that recipe again one day and in the meantime I have it for this one.

Wow.  I just love real Turkish Delight.  Have tried to make it several times with no luck  (I have never been able to find a genuine recipe that did not use gelatine so I was flying blind.  I did have some interesting results that resembled glue tho.)

As soon as I find some rose water I will be tring this out.   
I also like the lemon flavour.  Would that just need lemon juice added?  I have plenty of lemons so could try that until I go into town next.

There is a couple stores in Adelaide that sell 'Ladies Fingers'  It is a sweet very like baklava, but rolled up with nuts and turkish delight inside.  They look like cigars,  and sooo yummy.

Rosie - maybe lemon oil? I'm not sure if the acidity of the juice would disrupt the gel.... anyway whatever flavour you use it needs to be added right at the very end.

Apparently because my icing sugar dissolved it means that not enough evaporation occurred during the cooking. I left the MC off but that wasn't enough i guess. The original quantities were for a saucepan which has a lot more evaporation so i think next time i'll reduce the amount of water that is mixed with the cornstarch. According to a wise food nerd 705mls rather than 750ml.

 :) Thanks Sares and welcome, I'm amazed everytime I log on at the information I gain from this forum, I will be giving this a try for xmas.  Today I made the "Milo" Yum, also whizzed up a LSA mix although the Milo has all the ingredients in it.  The Bacon Jam is a real favorite and I will be making my fourth batch tomorrow, everyone who tastes it wants to take some home.  Thanks again.

Thanks Sares   :D - I have not had time to try making turkish delight yet and this will save me a lot of trial and error I suspect!

Re the rosewater - I made some cinnamon almonds (from the recipe on this forum) the other day and added 20ml of rosewater and 30ml of water rathar then 50ml of water and it worked quite well - it imparts a very subtle flavour and goes nicely with the cinnamon.
