Title: Sun dried tomato and Capsicum Dip Help

Has anyone used pine nuts instead of cashews? I have run out of cashews, but have pine nuts, almonds or walnuts.

DizzyGirl  i would use a little of pine nuts a lots of  walnuts. ;D

Dear forum friends,
I have a customer who has requested no sun-dried tomatoes in this dip.  I was wondering if anyone had any ideas how we could change this dip around to accommodate her request but still demonstrate the basic idea of demonstrating this type of dip?
Looking forward to your help in the next few days.

I suppose it depends on the reason for not including sun dried tomatoes - but could you use something similar, like the marinated red peppers you get in oil (in a jar)

Oh brilliant, ladies.   I was told that s-d tomatoes didn't agree with my customer.  I guess if I substitute marinated red peppers, I could use fresh tomatoes. and that would be a straight swap.  Or fresh capsicums with grilled and marinated eggplant.

Thanks to you both for the advice.  Will practise both adaptations and decide.  I appreciate your help.  :)
