Title: milk chocolate mud cake

250g unsalted butter
200g Cadbury milk chocolate
1 Tablespoon of instant coffee
11/2 cups boiling water
13/4 cups caster sugar
2 eggs
11/2 cups SR flour
1/2 cup cocoa

Method
preheat oven 160C.
lightly grease and line tin. (this makes a large cake, the mix is quite runny and its sticky when cooked so make sure you line the tin)
Dissolve coffee in boiling water.
Combine butter and chocolate in TMX 3min 50 sp 2 or until melted
add coffee/water mix and sugar, sp 2 until combined and sugar dissolved
add eggs, cocoa and flour.  interval until combined.
Bake for 1 hour to 1/14 (although I find it usually takes longer in my oven) allow to cool in pan.

We use this for all our special events.

Terri -  it was a wonderful cake, everyone loved it and all wanted seconds. Sadly for myself there were no left overs. Thank you so much for sharing that recipe.

maddy - Loved this cake Denise! Thank you.  I poured the batter into 3 sandwich pans and baked for 37 minutes, middle rack.  Also let the cakes cool completely in the tins and they came out easily. For the icing I blitzed 100g cherry jam until smooth and runny, then set aside.  I  made a double batch of creamy vanilla frosting (minus the vanilla extract), and subbed with the jam. Absolutely will make again.
This works well for cupcakes too. I set the oven on 170oC and baked the smaller cupcakes for 23 minutes...and the larger ones for 27 minutes. Topped with the creamy vanilla frosting, with only 1 tsp. vanilla extract, and 50g strawberry conserve (blitzed first).

Chookie, we make this all the time, its a lovely rich cake. If you think the TMX instructions need modifying please let me know. I play but forget to write it down.
I usually buy 2 bars of chocolate one for the ganache!

Great cake Bedlam. I guess if you used Lindt flavoured chocolate you could lightly flavour it. I was thinking orange intense.

I made this last night for my Son's birthday, it was a wonderful cake everyone loved it and all wanted seconds (which there wasn't any of) sadly for myself there were no left overs :( thank you so much for sharing that recipe

Hi all! I am making my sons birthday cake tomorrow which will be in a Wilton decorative tin. Was thinking I would use a double quantity as the tin is quite large. The only problem I can forsee is trying to get it out in one piece.
Do you think this recipe will be suitable?

OK so I am now on my 3rd attempt of making this mud cake in the airplane tin. Fingers firmly crossed.
1st time I brushed the pan with melted copha and covered in flour (as the directions on the pan stated)
2nd time I sprayed in generously with canola spray.
Both times ended in the cake splitting in half through the middle and me having to scrape the rest out from the base  :(
That was last night.....

Today I made the cake realease and brushed that all over the pan. It's in the oven now. If it doesn't work this time I will ditch the mud cake idea and just do a normal sponge recipe as I am wondering whether it is to dense or all the chocolate and sugar is making it stick?

another failure!  >:(
All the cake is in the freezer. Luckily for me I did a Cake Pop class last week. You make them with discarded off cuts of mud cake mixed with choc ganash or cream cheese. So I now have enough cake to make about 300 cake pops! So all the cake will now stay in the freezer untill I get some sticks. I think cake pops will be on the menu for DS2's 1st birthday in June.  :P
Going to try a normal butter cake recipe tomorrow and hope that I get better results with that.

Bugger @HomeMum, what a shame. I have trouble with moulded cake tins, I think some cakes work and others don't. Gee hope the next one works for you or you will be making 400 cake pops lol. :)

OK so attempt #4 is now in the oven. This time I am trying this one- Basic Butter Cake - Lady Flo Bjelke-Peterson
Coated the pan in the cake release from the recipe linked above. Fingers crossed once again  :D

Attempt #4 worked beautifully. The butter cake recipe was perfect. Breathing a huge sigh of relief here.

Butter cake came out beautifully first time.
Thanks everyone for your encouragement, help and advice.
Now that the cake saga is all over I am heading back to the kitchen to start baking the cookies!

Maddy your cake looks far good to eat. Wow your presentation is amazing. It wouldn't really matter if the cake was made of cardboard as it looks wonderful :)

I am going to have to try this recipe. My daughter can eat a block of Cadbury's in one sitting so it will be perfect for her. What do you usually use for frosting/ icing?

Any icing  would work  ;)  If she's a chocoholic, and nice chocolate ganache perhaps.
The icing I used was the creamy vanilla frosting (http://www.forumthermomix.com/index.php?topic=6722.0) with added cherry jam as mentioned above.

The link Jakodai posted is how you do them.  Really simple....a Wilton 1M tip, keep your bag vertical and pipe from the centre to the outside.  The creamy vanilla frosting (http://www.forumthermomix.com/index.php?topic=6722.0) is the perfect icing for these.

Celebrating DH PhD graduation with this cake.  I'm using Cadbury Premium baking Chocolate 45% and Nature's Cuppa instead of coffee.  Baking in the oven now.
