Name of Recipe: Tuna Stuffed Capsicum Strips - a great Tapas dish
Number of People: 16 pieces
Ingredients:
3 red capsicums - you can use green or orange if you prefer
1 tblspn olive oil
1 clove garlic
1 tsp olive oil extra
100g tuna in oil, drained and patted dry with a paper towel
55g cottage cheese (I used onion & chive flavour)
a few sprigs parsley ( you want a couple of tablespoons once chopped)
S & P to taste
Preparation:
Preheat oven to 200oC. Place the capsicums on a tray and brush with the oil. Roast 30 minutes, turn over and roast a further 10 minutes until skins have blistered & blackened. Place onto a cold tray, cover with gladwrap or a plastic bag and leave 5 - 10 minutes. The blackened skin will pull off easily. Cut them into quarters and remove the seeds. Place in the fridge until you are ready to stuff them. This step can be done 1 or 2 days in advance.
Before proceeding to fill them, pat the capsicums dry with a paper towel.
Filling - This can also be made in advance
Drop the clove of garlic on running blades, speed 7. Add the tspn oil and saute 1.5 mins/100o/speed 1.
Add the tuna, cottage cheese & parsley leaves. Mix for 10 sec/speed 6.
Scrape down sides, add S & P and mix for a further 5 sec/speed 6.
Assembly
Place a heaped tspn of the tuna mixture onto the pointed end of the capsicum. Roll up. If you are using extra large capsicums as I was, just cut the excess off once you have them wrapped enough. No need to secure with a toothpick. If they are too big for a mouthful, you can cut them in half once rolled as I did.
Place on a serving plate, cover with plastic wrap and refrigerate at least 2 hours or overnight.

I'd double the recipe then CP - they certainly would be something different.

Judy they look very professional. I'd probably put ricotta in as that would give me an excuse to make some more.

Thought you might like to see the way I served these today. I placed them on paper towels when first made then transferred them to the spoons just a couple of hours before serving.

Thanks girls. VHJ, seeing as we can't convince you to try tuna, I would think chicken would work but it hasn't the strong flavour of tuna so perhaps you would need to add something else to the mixture eg chopped walnuts and gherkins or sweet chilli sauce and coriander. You are dealing with a very small amount of filling here so you need to have any additions minced quite finely so that they incorporate with the cottage cheese easily. Remember that a 100g tin of tuna drained would be less than 100g so only put in what can be mixed through easily.
