Title: Fruit Loaf, kneaded in TMX and baked in Bread Machine

The good thing about this process is that it is so predictable. Knead the dough in the TMX, let it rise to double, form into loaf and let rest in Bread Machine Bucket for 15 mins. and then bake in Bread Machine for 1 hour and 10 mins. How easy is that!!!!

500g Bread Flour,(I used Laucke , no need for sugar or salt). Add a teaspoon of each if plain bread flour is used.
3 teaspoons of dried yeast.
2 teaspoons of each of cinnamon and mixed spice.
1 teaspoon of nutmeg.
300g. of warm milk
1 egg
300g mixed dried fruit. ( I used Apricots, Sultanas, Dried Cherries, Cranberries and mixed peel,that I made )

DO.

Weigh fruit and cut Apricots into 3. Set aside with other dried fruit.
Weigh flour into bowl and add spices and yeast.
Warm milk and beat into it egg, then pour into bowl.
Knead for 3 mins.
Add fruit and knead for a further 1 min.
Leave in bowl to double.
Remove from bowl and form into an oval shape that will fit into Bread Machine Bucket.( I line bucket with a silicon sheet cut to fit. I REMOVE PADDLE
Rest in bucket for 15 mins.
Spray with water or brush with egg wash. Cut cross in the top of dough to allow for an even rise.
Place into Bread Machine and set timer to bake for 1 hour and 10 mins.
Remove from machine and stand for 5 mins, then cool on wire rack.

Notes. You may add honey or sugar to bread mix for a sweeter loaf.
Could add walnuts, or any combination of fruit.

No then he would want to give it back permanently if he thought I needed it.  I picked it up at a garage sale for $10, didn't really need it back then and only used it twice, both times unsuccessfully.  This chap has gone through a couple of bread machines over the years as he uses it almost daily so I gave it to him knowing it would be appreciated.  DD had one but I think she gave it to her MIL who probably doesn't use it either so I might test the ground there and see what happens.  Just would be so good for summer although I am a roll person moreso than a bread maker.

Thanks for this recipe Chookie. It looks great. (Unlike my most recent effort in the breadmaker :(. Very ordinary Orange & cranberry bread. It was OK toasted with lashings of butter, but wouldn't recommend it.)

Cookie,  I have a Panasonic 206.   It is quite old and I was having trouble with the loaf sticking to the blade so I had given up using it.
This time ,  with the TMX bread,  I have cut a silicone sheet to fit over the shaft.  This has proved to be very successful. Also, while i was trying to work out the length of time necessary for the different loaves,  after 1 hour I stuck a thermometer in the loaf to test for 'doneness'.(Andi mentioned this and Dan Lepard also) Why I mention this ,  is that if a different machine is being used,  then the baking time will probably be different.  The temp. should reach 200o Fehrenheit for the bread to be cooked. 
With cake I have found the usual testing with a bamboo skewer best.  The other 'trick'  I have experimented with is to cut a deep cross in the dough before placing in the machine.  This provides an even rise on the top.
The fruit loaf is superior to any bought loaf,  and cooking in the bread machine is easier than in the oven where you have to keep an eye on it.
Cookie if you have a bread machine of a different make just adapt a basic mix that you use in the machine keeping the same weight in flour and liquid,  ( I used the NO Fuss proportions ,  800 to 820g in total )
It is well worth a try.

I have a panasonic Chookie so will follow your instructions and have a go. I'll have to dig it out of the depths. I follow Andie's great suggestions using a thermometer for my cakes etc and will now do so for breads. It's been good for cakes.

Mine is a Panasonic SD 251. It has a bake only option for cakes. It says remove the kneading blade and select the bake only option. It also says to line the pan. We'll see what happens. :D

I made a couple of loafs in my Sunbeam bread maker and removed the blade. They turned out perfect and were demolished in one sitting. I am so glad I didn't sell my Bread maker now. Will be very handy. And I have been after a nice fruit loaf recipe to do in the bread maker so will give this one a go. Thanks ACW.

Dede,  that is great.   You should be fine with the fruit loaf.  Just use whatever dried fruit you like. You will notice that I haven't added any extra sugar,  but then this is to our own taste.  Cutting a cross in the dough before putting in the machine does seem to produce a more even top.   The ones in the photo i posted were NOT cut.

Go for it Bedlem as it uses less time than making it in the oven.   You have a complete hour when you can do other things.  When I cook bread in the oven I seem to watch it a fair bit and also turn it around 1/2 way through.

JB, mine lives in the laundry with the ice cream machine and the ice maker.  All are set and leave for a set time so don't need to be watched.

The Christmas sourdough class I did today actually used the TMX, Kitchen Aid and breadmaker to knead the doughs.

Did you make 3 different breads at the same time using the 3 machines or did you just get a choice of which machine to use?  When I went on a breadmaking course last May we made 5 different breads with no machinery whatsoever and it was Very Hard Work indeed. It was only revealed at the end of the day that they had Kenwood Chefs that could be used if anyone was struggling.   :'(

Yes Meagan she has one at last. She said she felt she should buy one as her TMX friends send so many people to her classes. She is having trouble with the council and parking at the moment so next weeks class is cancelled.

JB we made brioche mainly and a lovely sourdough chocolate bread that goes well with cheese.
Some people elected to use the bread machine to knead the dough, a couple used the TMX (me) and all the others did it by hand. That was hard work as it was 36 or 37 degrees. I am just about to put my brioche dough into the oven. I added fruit and made it into a panettone. Last night when I got home I put it in the fridge. I took it out this morning and left it for a couple of hours to get to room temperature. I then kneaded the fruit in and let it rise. It has taken just over 6 hours and looks lovely.
I want to make a stollen later in the week but I have to create the white starter first as I make it from a rye one.

Cookie, how many were at the class on the 4th? I am not surprised she is having trouble with the council and neigbours, as the class I went to had 21 people and it was just too many.  I still learnt heaps and enjoyed it, but I think she needs to have a max number for her classes. I hope things work out for her though.  I would like to attend more classes.

Cookie, it must have been very uncomfortable baking in that heat!  And chocolate bread which goes well with cheese?  ??? As a cheese lover, I find that a very odd combination indeed, but I will take your word for it  ;D

love the recipe but just cannot seem to get the nuts and fruit to mix into the dough after 2 minutes of kneading. any suggestions?

I made this yesterday and a small amount of my fruit didn't seem to mix into the dough whilst kneading either - I just pushed it into the dough with my hands, seemed to do the trick!  (I didn't use any nuts, just fruit).

Next time I'll probably only bake it for 1 hour and not 1 hour, 10 minutes as I think it was slightly over done (I'm still getting used to my new breadmaker though).

A great recipe though and still loving the Thermie/Breadmaker idea!

Alanboff,  I do what katiej does and poke any 'floating' fruit in as I roll it to fit the container.

Katiej,  i think the length of time for cooking depends upon your machine.

Cookie it is very nice toasted,  I cut the loaf up and froze it in 2 slice lots.

bevy4,  yes.  It is just not having to light up the oven when it is hot.  Just make sure you poke in any fruit that shows on the top as it will burn.  Have a look at JulieO,s fruit loaf recipe.

Jan,  did you legit rise in the bread machine bucket?  I spray the top, cut a x in the top and let it rise a bit.  DEpends on how hot the day is.

Just had to say how fabulous this fruit loaf is.  Light (for a make it yourself), moist and not too sweet loaf with beautiful taste and texture. I used a mix of sultanas, raisins and cranberries. Love it. Thank you Chookie for posting this one.

 :)Forgot to say that this cooks in just under an hour in my breadmaker (Tefal home bread)

I am making this loaf. I dont have a bread machine. Has anyone tried this then cooked in a standard loaf tin in the oven. I cant see why it wouldn't work but wanted to ask the bread experts.

GHM,  this will work just fine in the bread tin.  Make sure you poke any fruit in ,  that may stick out, as it will burn.

Hi ACW yes it turned out lovely, but I think I need to take more care when adding fruit in TMX it seems to clump together. I used the Lauke wholemeal bread mix, would definitely do it again this way. (http://img.tapatalk.com/d/13/01/06/su7u2yru.jpg)

I did notice the fruit begin to burn so i just covered with foil for the remainder of the cooking time

I find that adding the fruit by hand you get a much more even distribution, although it does love to pop out everywhere.

Yes, always with all bread.  Just keep kneading and pushing the fruit in.  Finally form into a shape, push in any visible fruit, spray with water or brush with egg wash. If you are cooking in bread machine , cut a X in the top.

the 300g of fruit in this recipe is loads of fruit !! i found that it was quite messy kneading it in as the fruit was flying everywhere!!!! but I as much happier with the result, the fruit is lovely and even throughout. too many poking out to push in so i covered the top with foil. I think next time i will substitute some of the fruit for nuts.  Why is it that some loaves cll for a tbs of oil and others no oil????

We love this too. Don't know about the oil. Some of the fruit that jumps out kind of finds it way to my mouth. I used some crystalised cumquats last time and dried cherries.

I think that the oil helps  keep the loaf ' fresh'.  Glad you and Cookie like this loaf.  I like it also.  
Today Bakers Delight had Hot X Buns for sale.  $ 1.30 each.  Lots of spice and a sultana here and there.
