Title: Smoked chicken & Avocado fettuccine

Name of Recipe: Smoked chicken & avocado Fettuccine
Number of People: 4

Ingredients:

1-2 ripe avocado's, chop in large chunks
1 large smoked chicken breast (or 2 small), chopped
200g rindless bacon
3 garlic cloves
handful flat leaf parsley leaves
1-2 chopped spring onions
20g butter cubed
200g philly cream cheese (cut into small cubes)
black pepper
300g fettuccine (snapped in half)
900g boiled water
2 tsp. TM vegetable stock.
toasted pine nuts for sprinkling.

Preparation:

Peel and cut avocado's into large bite size chunks.  Set aside.
Cut bacon into thick strips.  Set aside.
With blades running on speed 7, drop in garlic cloves & parsley through hole in lid to chop finely.
Scrape down jug and add 20g butter, cook 1 minute, 100c, reverse speed 1. MC on.
Add in bacon, and spring onions, &  cook a further 5 minutes,  100c, reverse speed 1.  MC off.
Empty bacon/garlic mix into a thermoserve, and set aside for later.

Weigh in 900g  boiled water,  2 tsp.  TM vegetable stock, and snap fettuccine in half and add to the water.
Set for 13 minutes, 100c, reverse speed   ^^  Use TM spatula to help incorporate the pasta to begin with.
Place MC in closed position and continue cooking.
When finished, add in the cubed cream cheese, bacon/garlic/butter  mix, and chopped avocado & smoked chicken.  Add a few twists of freshly ground black pepper.
Cook 4 minutes, 100c, reverse speed  ^^

Place into thermoserve, and give a good mix.
Add an extra sprinkling of fresh cracked pepper & toasted pine nuts to serve.

Makes a full jug.

That's a nice, quick meal maddy - I love avocado but DH doesn't, wonder if he would notice it in there if I mashed his :-))

Hi, does anyone have any ideas on what would replace the job of the bacon which is vegetarian?  This looks great, but DD1 is having a go at being veggie at the moment so I`m trying to get a vegetarian hat on.

Caroline are you just looking for the flavour of bacon.  If you are, in Dani's Book 'In The Mix' is a recipe for Virtual Bacon Dust from George Calombaris which is just brown sugar, sesame seeds and dashi powder.

HI there I am new to the forum and have ordered a TM which should be here at the end of the week.

I thought this recipe looked delicious and wondered if it would be easy enough for my first go at the TM.

Any thoughts would be appreciated  ;D

Hi auds, welcome to the forum.  maddy's recipes are easy to follow so you should have no trouble with this dish.  Hopefully you are having a delivery demo with the machine and will get to use it with your consultant before tackling anything on your own.  Just make sure you have all the ingredients you need at hand and read the instructions carefully, perhaps read them twice as we all make mistakes by rushing. You will need to make the vegetable stock concentrate for this recipe so perhaps you can organise for that to be part of your delivery demo.  There are recipes on the forum for that as you won't have any books until you receive the TMX.  Here's (http://www.forumthermomix.com/index.php?topic=196.0) one VSC recipe and here's (http://www.forumthermomix.com/index.php?topic=836.0) another so that you can get the ingredients in. Let us know how you get on.

Hya Judy.... thanks for your response.  I dont think I am getting a deliverydemo as the consultant asked me if I wanted it delivered directly to me at home and I said yes.

Iam sure its trial and error so if I do what you said and read everything twice hopefully I should be ok.  Cant wait to get it!

Hopefully they will run through it with you, and possibly make something.

Maddy that recipe looks delicious. The mob don't eat avocado but they can go without or I may copy Judy and mash some in. ;)
