I am making a potato salad and have always used store dressings, its now time to start making my own potato salad dressing.
I have eggs, sour cream, natural yogurt, plus mustards, spices herbs etc. Sunflower oil, aplecider vinegar, balsamic vinegar, olive oil
Its the start of summer and my first summer with my tm, so i want to start of on a good note.

i use this dressing for
potato salad,pasta salad ,garden salad,feta salad
any salad really, but great with egg salad.
770 g mayonnaise (from aldi ) or make your own
1 tlbs whole grain mustard
¼ teaspoon of hot mustard Optional
2 teaspoons of dijon mustard
1 cup of white vinegar
1/3 cup of oil (i use veg oil )
1 teaspoon of balsamic vinegar. Optional. (gives a nice colour)
Whisk everything together for 1 min, speed 3
Makes over 1 liter of dressing,
It will be very thick once left in the fridge. just add some dressing in a jar with lid add a few drop of vinegar and shake well

I found quirky jo's mayo recipe so i made that, halved your recipe and now have a yummyndrsssing in the fridge for my potato salad, it tastes delish. Making the salad with potatos (surprise!LOL) eggs, spring onions and bacon so should be really yummy.

How do you chop or slice your eggs Hally (in quarters?)? Also how do you assemble your salad? I'm guessing the eggs would break up if you stirred the dressing through the potato, eggs, bacon etc?

I only ever chop mine in half as anythink smaller seems to disintegrate when you stir it. As I use small eggs they tend to end up about the same size as the potato. I usally layer the potatoes, bacon, eggs and dressing and then give a small stir so I don't need to mix too much. Hope this helps.
