Name of Recipe: Thick Carrot & Tomato Soup
Number of People: 4-6 serves
Ingredients:
330 gms carrot, cut into 5 cm lengths
2 onions, cut in half
130g celery, cut in 5 cm lengths
15g olive oil
75g frozen peas
100g canned red kidney beans, drained and rinsed
425g can tomatoes, crushed or whole
320g water
1 tblspn vegetable stock concentrate
1 bay leaf
Small handful of parsley - you can chop this first for a few seconds in the TMX and set aside.
1 Tblspn umami paste (http://www.forumthermomix.com/index.php?topic=7138.0) (optional but it does boost the flavour)
S & P to taste
Grated parmesan to serve
Preparation:
Chop carrots, onions and celery 5 sec/speed 6.
Add olive oil and saute 5 mins/100o/speed 1.
Add the rest of the ingredients except for the S & P, Umami & parmesan. Cook 35 mins/100o/speed 1-2.
Once it comes to the boil, turn the heat down to 90o
Remove the bay leaf, add the umami paste and puree the soup for 30-40 seconds/speed 8.
If the soup is too thick, add water to suit.
Test for seasoning, add pepper and salt (if necessary) and serve sprinkled with grated parmesan.

Thanks CC, it is a bit of a pantry/fridge stock soup & they are always so easy to whip up.

I'm amazed at the taste Umami paste gives to food. Nothing specific to identify, just extra depth of taste.

Now I've made my Umami paste, I'll be making this. We eat soup all year round. :)

I made this for the four of us for dinner on this wet and cold evening. I cooked it for an extra 10 minutes as it tasted undercooked, but it still had a raw onion flavour, so next time I'd sautée the onion for 5 minutes before adding the carrot and celery. It was tasty - especially after I spiced it up with a little chilli and served it with warm bread.

A lot of the time these days I saute the onion etc on varoma temp ES to get rid of that raw taste. I don't even remember making this one it was so long ago :-)) Thanks for trying it.
