I've got my focaccia dough (EDC recipe) on its first rise right now.
My question is I want to put this in the fridge to make later and I'm not quite sure what to do.
I was going to knock it down after its risen - it's in a bowl with cling wrap because I haven't got my bread mat yet :-(
Then I was going to put it back in the bowl into the fridge.
Take out of fridge and les gape it and let it have it's second rise and then proceed with EDC recipe garnish etc cook
Any hints or tips???

SuzieG, after fridge, bring back to room temp, then proceed. Let us know how you go. Have fun.
