LellyJ - This was yum, thanks Cookie. We are not dairy free so I used milk and cheese as per the recipe. It did take longer to cook than 35 minutes, didn't actually take notice of exactly how long but after 35 minutes it wasn't set in the middle. Perhaps I didn't squeeze out my spinach enough. No matter though, just cooked it a bit longer and it was delicious, healthy and easy! Thanks again.
Chookie - Cookie, this looks great and is similar to my Favorite Quiche. Last time I made it i forgot to put the flour in so it became GF. I have been thinking about how to make it Lactose free. I think Soy milk and extra eggs would help and perhaps tofu, all zapped in the TMX. Creamed sweet corn is another possibility to give a bit of bulk.
O4aTimtam - I bought a bag of baby spinach instead of a bunch. I used half a bag, so about 125g when in. I think I probably could have used more as it cooked down quite a lot. Used Greek feta chopped into small cubes. It was delicious.
LellyJ - Tim Tam, I used bag baby spinach, 200g worth, I think it was plenty. I personally prefer greek fetta, but I made this with danish as that is all the local shop had--again IMO, I don't think it matters.
Cuilidh - Pretty well followed the recipe but used soy milk and soy cheese (for the first time) and added some creamed corn as well. Everything turned out great. I'm really pleased. I would probably use a little less dill next time but the creamed corn worked - I used most of the 420 gm tin, and could have used the whole tin without it being overpowering but I'll know that next time. Using the whole tin left some of the egg mixture over so I just made a couple of wee savoury quiches in my muffin tin. Thanks for this recipe, I'm glad that I now have a good, reliable quiche I can make for DH.
Moo2 - I made this with spinach and a bit of zucchini as I didn't have quite enough spinach. It was really lovely and everyone ate it all up, even though zucchini is one of their least favorite foods. Will definitely be making it again. Thanks for posting Cookie1.
Uni - I finally made it, better late than never. Smells and looks good.
Hally - This is yummy, we had some for lunch with a nice green salad and chookies no fuss rolls. Thanks Cookie.
-
Good one Cookie.
-
tomorrow nights dinner for sure ;D
-
Thanks Cookie. Looks like dinner's sorted. ;D
-
YUM! Thanks looks good.
I just have to tweek it to make it dairy free. Any ideas!
-
Bootobethin, that was exactly my thinking. It looks great and I'd love to try it, but we're now lactose free so tweaks will be greatly appreciated.
-
Could you use soy "cheese"?
-
I'd say it's worth a try.
-
Yum thanks Cookie will try soon

Will think a bit more on this. Good luck.

Very true Chookie. We usually have quiche about once a week here, but different varieties. Great for dinner and leftovers are good for lunch.
-
Thanks, Chookie .... don't stop thinking! If I get a chance this weekend I'll give this a go with tofu and see what happens. The creamed corn idea is also worth a try..
-
Oh looks so good.
I need to try this,
Thanks,
Robyn
-
Might make this on the weekend. Does it freeze ok?
-
I think it would, it's like any other quiche.
-
Hi Cookie, thanks for this one. Can't wait to try it, it is in the oven as I type.
Just a couple of queries for you Cookie, unfortunately we don't have home grown spinanch so I went to Gilberts (for the SOR folk) and the chap suggested I buy a bag of baby spinach instead of a bunch. I used half a bag, so about 125g when in. I think I probably could have used more as it cooked down quite a lot. Can someone suggest a weight, so I can use this time? (Although I expect after tasting whats in the oven I'll be able to answer my own question!).
Also I used Greek fetta, so chopped into small cubes before I added it, Should I have used a soft fetta as I couldn't see chopping mentioned in the recipe.
Last question, before the :-: symbol, should there also be a ^^, as I wasn't sure what speed to use?
Thanks, and sorry for the questions, I am not very inventive yet, so tend to follow recipes to the letter.
Thanks, TimTam :D
EDIT: It is out of the oven, and delish ;D. Could have done with a bit more spinach me thinks ...
-
o4atimtam I have changed the recipe and put in speed 1. Thanks for that. I hardly ever use ^^ as I am scared the blades won't turn. I used almost a packet of spinach for mine, but I think just use what you have. For the feta, again use what you have. I simply crumbled mine as I put it in.
I guess I'm not as careful as I should be in putting up recipes as I take a lot for granted. Thanks for the reminder, it's appreciated.
I'm glad you enjoyed it.
-
TimTam that looks great, was it yummy :D

Cuilidth, there is a recipe for a Sweet potato custard in the latest Dish Mag. Could make an excellent filling for a similar pie. Will investigate further.
-
That's so thoughtful of you, remembering me, Chookie, I appreciate it. I'll look forward to hearing whether you think it is worth trying out. I'm taking an extra long weekend next week and hope to catch up on some recipes then. With luck I'll tackle the Spinach Impossible Pie (using either soy or coconut milk, possibly some soy cheese and cream corn) this weekend. I'm looking forward to see how it turns out.
-
Marina, I have posted a recipe for you under sweets. I thought it was going to be a savory dish but on closer inspection it was sweet. I have converted it but haven't tested it.
-
Thanks, Chookie, that's on my list for next week it sounds SOOOO delicious - I'm a sucker for kumara so it is a great choice for me to try.
I've got the Spinach Impossible Pie in the oven just now. Pretty well followed the recipe, but used soy milk and soy cheese (for the first time) and added some creamed corn as well.
As I started typing the above paragraph I realised that I haven't set my timer so am hoping I don't over cook it. Looking forward to seeing how it turns out.
-
Well, I managed not to overcook or burn the quiche, so that was a plus. I wasn't sure what I would think of this once it was finished as I had never tasted or cooked with soy cheese but everything turned out great. I'm really pleased. I would probably use a little less dill next time, but the creamed corn worked - I used most of the 420 gm tin, and could have used the whole tin without it being overpowering, but I'll know that next time. Using the whole tin left some of the egg mixture over so I just made a couple of wee savoury quiches in my muffin tin. Thanks for this recipe, I'm glad that I now have a good, reliable quiche I can make for DH.
-
Thanks Cookie for that extra info. I'll make sure I stay away from the ^^ too.
Yes, Fundj it was as delish as it looked! I gave Mr TimTam a small sample when he came home from work - "Thats okay, we could have some for breakfast", which is high praise indeed from someone who doesn't think it is a meal unless it has meat in it ;D! Thank you again Cookie.
-
I have bought the ingredients for this pie a few days ago, hopefully i get a chance to make it 2morrow
The 1st thing DH* will say is, i am not eating quiche love , Then i will say there is no pastry love so it’s not a quiche, then he will give me :-)) then eat it ;D
-
You certainly know your man Uni and I love that you both call each other 'love'.
-
We have been calling each other that since i was 14 years old, it’s so annoying some times
You are ******** ******* ***** **** love. If u know what i mean
-
Yes, I think we all know what you mean ;D ;D
-
I made this last night with spinach and a bit of zucchini as I didn't have quite enough spinach. It was really lovely and everyone ate it all up, even though zucchini is one of their least favorite foods. Will definitely be making it again. Thanks for posting Cookie1.
-
:-* :-*
-
i finally made it,better late than never ;D
smell and looks good
-
It does look good. I'm inspired to make another one.
-
I'd like to try this but don't have a quiche plate, do you think I can use a baking tin lined with baking paper or a rectancular pyrex glass dish?
Does the baking vessel make a lot of difference other than shape? Vary cooking time maybe?
TIA!
-
You can use any dish you have chocymoose. I have taken a photo of some of the dishes I would use if I didn't have quiche dishes. The pyrex lid would be a little small so you would need to use 2 of those but you may have a much bigger one. My quiche dishes are 26cm dia and either 4 or 5 cm deep so if you use a similar sized dish and only pour the mixture in to that depth, the cooking time should be the same.
-
Thanks JD! I will hunt around and see what I have. Might need to use 2 casserole dishes, I'll be trying this one today ;D
-
Are you supposed to use the spinach stems too or cut them off? Made this today without stems, it was quite nice and light :)
-
I don't know what Cookie does chocymoose but if I buy fresh spinach I always chop off the stems but if it comes from my garden I do use part of the stem in my cooking and cook that for a while before adding the leaves.
-
This is yummy, made some today and we had some for lunch wth a nice green salad and chookies no fuss rolls,
Thanks Cookie
H :)
-
Here's Hally's photo - umm, I thought you didn't like spinach Hally? Maybe you used baby spinach.
-
I hate silverbeet, big spinsch i can swallow, but love baby eaves, so yes used baby eaves.
Thanks photograper placer :D
All done in the morning, now the veggie patch!!!
H :)
-
I use baby spinach for my recipe and use stems and all.
-
Yes i used a whole bag stems and all.
Very nice.
Dh has requested this for lunches on a regular basis
H :)
-
Lovely and healthy. Chookie has a similar recipe too. It's here (http://www.forumthermomix.com/index.php?topic=5690.0).
-
Thanks cookie, just had a look, that will be my next one to try
H :)
