Title: Hello and help

Hi all,
My name is Helen, I'm from Perth and I've had my thermo for a couple of months now. I've been happy mucking about with recipes and have had no major failures until now - with Mayonnaise! I made it once, when I'd only had the machine for a couple of weeks, and it turned out fine. Beginners luck, I think: since then, every time I try it it either curdles or - tonight's "close but no banana" fail - it just doesn't thicken. Does anyone have any advice? Everything I use is at room temperature. I do think I'm adding the oil too slowly but if I try speed it up I can hear it curdling.
Any advice or comments would be well appreciated!

I'm no mayonnaise expert, but I do want to welcome you to the forum.  I love my Thermomix and I'm thrilled that you have one too.

hi helenis, welcome to the forum.  Good luck with one or more of the 3 links CC has posted for you.  You will get it right again, it is a matter of perservering and trying different recipes until you find your favourite.

Hi and welcome helenis - Like you when I first started it split every single time - I still don't know why cause I don't think I do anything different but I would always just clean bowl out add new yolk and vinegar and feed the split mix back in and it would work the second go round. I started to think this was just the way I would have to do it but something clicked and it works first time most times now. But it is good to know that all is not lost you can use your split mix to make whole again.  ;)

Hi and welcome Helen. Are you using lemon juice or vinegar for your mayonnaise?

Hi again,
Thanks for the links CC; I'll check them out for future batches but guess what - I followed the advice to try again with a new egg yolk and it worked! I also set the timer and poured the mix in counting down, rather than up, so I think that helped to keep me on track.
Yippee, no more pouring expensive sunflower oil down the drain  ;D

I'm now going to try converting my all-time favourite gluten free rich mud cake to a thermo-friendly recipe - if it works I'll post it in the cakes section 8)
