Title: Toasted muesli

Toasted muesli

Converted from Relaxed cooking with Curtis Stone. Its yummy!  :)
I didn't have any maple syrup so added more honey.

Ingredients

80g butter
3tsp ground cinnamon
3tsp grated nutmeg
½ tsp ground clove
50g honey
30g brown sugar
30g maple syrup
200g rolled oats
120g pepitas
120g sunflower seeds
100g slivered almonds
1 cup chopped dried fruit

Preheat oven to 180deg

Melt butter and spices on 60deg, 2 mins, speed 2

Add sugar, honey and maple syrup, 100deg 5 mins, speed 3 (the recipe says to simmer for 2 mins, i think 5 mins was long enough but perhaps it needs to be longer?)

Add oats, pepitas, sunflower seeds and almonds, 15 sec,  :-:, speed  4.

Spread evenly on a baking tray, bake 30 mins. (My oven had been preheating for a while and muesli was dark after 30mins so i removed it from the oven and just sprinkled the fruit on)

Stir in fruit.  Bake another 10mins or till muesli darkens. Muesli will be soft but will harden as it cools. Cool, then break up.

Thanks chocymoose, it does sound nice and I have all those ingredients.  I never buy muesli but this will be made.

Another recipe suitable for our Christmas hampers perhaps.

Chocymoose, was yours as dark as mine.  In fact, mine is darker than this picture shows. It gives it a burnt sort of taste even though I had turned the temp down to 160o after 10 minutes as I could see the mixture getting too brown.  I stirred every 10 minutes.

Hi Judydawn,

mine was quite dark but had been i nthe oven for half an hour and was slightly burnt around the edges but didn't adversely affect the taste. Just checked the recipe book and it definitely says 180degrees.

Hope you got it out of the oven in time and it wasn't too burnt!

Unfortunately it was too burnt for me chocymoose, never mind it cleared out a few odds and ends from the pantry  ;)

D'oh!  :-[ ok, worked out where I went wrong. Recipe says 3 tablespoons of butter, which was about 80g but with my shoddy scribbling I typed it up as 30g which explains why it burnt so quickly. Sorry Judydawn!! Will amend original recipe post

I was just thinking about making toasted muesli today so timely post.  I like natural museli but my son is being particularly fussy about anything I make lately and won't eat my museli, museli bars, porridge; he thinks it's all too healthy and wants bought stuff    >:(

Maybe the sugar & butter might help him get a taste for it.   Or he can have toast, again, and complain there's no nice food in the house.
