I found a recipe on the net for potato bread. I have adapted for gluten free, dairy free and failsafe. I was pretty happy with the result.
260g white potatoes, peeled and halved
250g warm (37 degree) potato water
15 g butter (I used nuttlex)
1 rounded tsp active dry yeast
3 tsp (white) sugar
1 tsp salt
410g bread flour (I used plain gf flour) Egg white lightly beaten (optional)
1. Put potato in tx basket with 350g water in bowl. 20 mins, 100
degrees, speed 4 or until break apart when stuck with a fork. When done, remove basket and pour water into a jug. Put potato into tx bowl, mash slightly speed 3 for 2-3 secs. Add 250g potato water, if not enough add warm water to make up. Add butter and stir speed 3 until melted. Leave potato mix until 37 degrees.
2. Add yeast, sugar and salt. Mix in flour to make thick dough.
Speed 5-7 until mixed. Set time to 3 mins lock lid and set to
interval. Leave in bowl with lid in place and let rise for an hour in a warm, draft-free place.
3. Set time to 2 mins, lock lid and set to interval. Divide and form as you want. Cover loaves with kitchen towel and let rise in warm, draft-free place 30-45 mins or until doubled.
4. Pre-heat ovento 180 degrees. Uncover bread and brush with egg white for glossy look. Bake 45 mins or until sounds hollow when tapped.
Not sure I would do the second rise again when using gf flour
- may need to experiment!

I've been asked to make bread for a Chrissy party on the weekend and then last minute sprung with a "can you make some gluten free too please" in the sort of tone that isn't really an ask ??? so thank goodness for this recipe. I have a little gf flour and some rice flour so going to use that and see how it comes out. If it doesn't work I'm going to have to buy some gf flour but will let you know how it works.
