Hi everyone,
Had my TMX for about 3 or 4 weeks and I'm obsessed. 
Just made Cyndi O'Meara's gluten free bread and the EDC mayonnaise.  The mayonnaise actually split so I took an additional egg yolk and 1tbs of just boiled water, emulsified and then gradually added the split mayo - worked a treat.

I must say as a cook whose a bit of a "purist" in the way "things must be done" I feel a bit guilty because the stove top isn't getting as much of a workout these days!!

I'm wheat intolerant so am constantly looking for ways to create more gluten free goodness in my life.  Am also interested in incorporating more raw food into my life so have been making green smoothies daily and absolutely amazing my friends, family, and work colleagues with some of the raw treats we've been churning out.

I'm passionate about the quality of our food and source the best I can afford.  I cook alot and read recipe magazines and cook books for pleasure... while I follow some recipes, I use them for inspiration to create recipes based on what I can eat and what's in the pantry or fridge.

I was a little bummed out recently when something changed in the White Wings Gluten Free Flour.  I'm just not able to digest it as easily.  This also happened a little while earlier with a gluten free bread that I was fine on, but then not.  So Thermie has come to save the day and now I can mill my own flours which is quite exciting.

It's been years since I participated in a forum - simply because I don't have alot of time, but they're such good fun.  So I look forward to participating and reporting on recipe triumphs, work's in progress and helping out where I can. Cheers, Amajjika

Hi Amajjika and welcome.  A TMX is a fantastic tool for someone who is gluten intolerant--I'm not--but one of my best friends is so I'm quite up with the requirements.  I feel she needs a TMX because gf stuff is so expensive!!  I'm sure it would pay for itself in no time as the Coeliac society estimate that being gf costs and extra 3000 a year--the TMX would pay for itself in no time by allowing you to grind all your own stuff etc.  Anyway, I am sure you will find the TMX and this forum a god send in keeping yourself gf and feeding on delicous food!!
