Is there such a thing as lactose free lemon butter or curd? I've been given a bag of lemons and thought I might make some this weekend but with DH having developed a lactose intolerance I'm not sure what my options might be. Any ideas anyone?
I will try to get onto QuirkyJo's blog later today to see if she's got anything there, but I'm open to any help / inspiration.

I should have gone to Quirky Jo's blog first - here's (http://quirkycooking.blogspot.com/2011/01/lemon-butter-made-with-rapadura.html) the very thing. Now I just have to find the thread on coconut oil to refresh my memory on this oil.

Kathryn, thanks for your response - you and I were both responding at the same time. Quirky Jo's recipe definitely says ghee as well, I'm just a bit wary of ghee "just in case" there is any lactose in there.

I am the same as you Marina... I am wary as I do know that peoples symptoms and reactions are all different for the same problem. That coconut oil is becoming a very handy ingredient!!!! :D

Girls, my Lemon Spread doesn;t have any butter in it. Does have cornflour. It is on my Blog and Forum. Sorry , still can't link.

Unfortunately I couldn't make your lemon butter, Chookie, as the only custard powder I could find had "milk solids" in it. I ended up making the CWA lemon butter off Bush Gourmand's blog. It is really nice and very easy - unfortunately, as I was transferring the rack of bottles from the kitchen bench to the table to cool all but two of the jars crashed to the floor and I am left with only two bottles .... but a very clean floor!!!
I also made Quirky Jo's lemon butter. I was a bit dubious about this - the caramel colour on her blog didn't look anything like lemon butter to me, but I trust QJ's recipes and I was determined to make a lactose free version so went on and made a batch of this regardless of my reservations - and it is, simply, gorgeous :D It has so much depth of taste that it was very hard to stop 'tasting' it and put it in the fridge for the night! We'll see if I can resist it today.
I must now go out and buy more butter and make more of the CWA recipe as I promised all my friends who gave me their lemons jars of goodies in return!
