Title: Best ever Chocolate Cake - conversion please!
Post by: missgrunge on September 20, 2011, 10:54:27 am
This recipe was on our local radio station.  Can anyone convert it to Thermo-friendly for me plse?  Many thanks!
Here's the recipe...

675g dark chocolate
450 g unsalted butter
675 g castor sugar
10 eggs.

Method

1. Melt the butter and chocolate in a double soucepan.
2. Whisk eggs and sugar in a really flash mixer (!!) for ten minutes until it looks really thick.
3. Fold chocolate and butter into eggs, combine thoroughly and pour into a lined baking tin.
4. Bake at 160C for 55 minutes or until set.
5. Allow to cool at least 12 hours.
Serve with creme fraiche and icing sugar dusted over

Many thanks,
Miss G.

I make a similar cake for weddings where the cake is to be served with a fork, I know it as a rich truffle cake as it has no flour whatsoever ii is very rich, moist and a heart attack with every mouthfull.

A 10" should do it, a smaller tin might hamper it rising so the more shallow the better, is a very rich cake so you do not need a tall cake anyway.

No-one able to convert this one for Miss Grunge? Could she perhaps follow the recipe for Torta Caprese in the EDC which would be to grate the chocolate at speed 8, remove.  Add room temperature butter, castor sugar and eggs to bowl and mix on speed 7 then add the grated chocolate back through the lid and mix on speed 6.  Quantities here are much more than those in the EDC so times would need to be more than those given there.  Step 2 in the original recipe is a lot of beating!
Anyone else like to have a stab as I am only having a guess here but it is an expensive cake to make so I'd hate to give Miss Grunge the wrong method.

Large quantities!
PLEASE DON'T PROCESS IN ONE GO

My choice would be to do this, a little more involved than jds
Chop chocolate spd 9 in three batches remove. Blitz the sugar in batches to icing sugar. Combine eggs and sugar insert butterfly spd 4 for maybe 4/5 mins set aside. Place choc and butter melt 60 4 mins speed 3 check if it is all melted. Add remaining ingredients combine with the spatula and if it needs it combine on speed 3 HTH

There is very few steps in this cake so i imagine it actually being easier and less work/dishes just to melt chocolate and butter in bain marie and then do the egg/sugar in the tmx with butterfly. Cant tell how much time but i imagine about 10 minutes and im not even sure if 10 eggs will make a good result in a tmx.

thanks for all the suggestions - I agree, an appalling amount of eggs and chocolate!  Scary!
Thanks so much for all the feedback

Any ideas what went wrong? (i am thinking size of tin)
I think It was to many eggs for the TM lots of sugar remand on the bottom, it was not really thick and was very runny. I will still sever it to my friends with coffee and  custard and cream. I will make up a name if they ask me.

Im pretty sure the eggs and sugar should be like a light fluffy texture which maybe tmx cant do with those amounts. Maybe try to make half ration and smaller tray next time.
