Title: Moist coconut cake

All coconut cakes are equally tasty but this is probably the lightest one I have made - the original recipe is no. 6 of the AWW top ten with the recipe being found here  (http://aww.ninemsn.com.au/food/cookingtips/776621/moist-coconut-cake-with-coconut-ice-frosting).  Will post pics after icing and cutting a slice!

Moist coconut cake - Very light cake!!!!!!!!!!!! while it appeared very light when touched in the oven, due to the moistness of this cake it is quite dense.   But really delicious!!!!

125g butter, softened
½ teaspoon coconut essence
240g caster sugar
2 eggs
40g desiccated coconut
200g SR flour
250g light or extra light sour cream – (I used ½ and ½ sour cream and natural yoghurt)
80ml milk –  (I  used coconut cream)

Coconut ice frosting

320g icing sugar
110g desiccated coconut
2 egg whites
1 tablespoon water (20 ml)
pink food colouring

•   Preheat oven to 180°C (160°C fan-forced). Grease deep 22cm-round cake pan; line base with baking paper.
•   Place butter, essence and sugar in TMX mix 30sec – speed 5.
•   Insert butterfly – 2 mins – speed 3.  Add in eggs, one at a time,beat 30 sec speed 3.
•   Remove butterfly add remaining ingredients  - beat 40 secs – speed 5.
•   Spread the mixture into the pan; bake for about 50 minutes or until cooked when tested.
•   Stand cake in pan for 10 minutes before turning onto wire rack.

Coconut ice frosting -  Combine all ingredients  in TMX  - beat 20 sec speed 5 - 6.

maddy - I made your cake (but turned into cupcakes). Love the taste!......but I confess to stuffing it up. After your direction of adding the butterfly and beating eggs......I didn't take the butterfly out, dumped the rest of the ingredients on top, and only then realised that you beat on speed 5.......then I knew I should have taken butterfly out! Mixed on regardless, so I really think it was well over whipped. Baked for 22 minutes but they sunk in the middle......no problem, icing covered it.
I did make the coconut ice, and used it on vanilla cupcakes.  I cut the sugar down to 290g, and added some more coconut for a stiffer consistency.....yummy.

MrsPlod - We've been making this recipe for a while, it's yummy thanks Johnro. This morning, I started making it and realised I have only half of the ingredients, so my subs were:
250 sour cream replaced by about 150g cream, 70g natural yoghurt and 60g strawberry yoghurt (cleaning out containers!)
80g milk replaced by 50g milk
No coconut
coconut essence replaced by 1t vanilla paste.
And yet it worked.

Zelda - I did a test run as I wanted to make it into a lemon and coconut cake and it was BEAUTIFUL and will ice perfectly - that is, if the butter icing defrosts ok! I played around with the quantities a bit which unusually for me worked. Will def. be making this cake again. Thanks for the inspiration.

Other than the very pink coconut frosting you can almost see the moistness of this cake!!!!!!!  :)  :)

Hally the first was drier whereas the 2nd is as the title suggests moist and delicious but would not travel as well in packed lunches - the pic of the 2nd almost shows the moistness xx I preferred the moister version but then I have finished with school bags and packed lunches for them apart from my own   :D  :D

Robyn, did you pour the syrup over the Nico recipe or did you leave it out seeing as you were going to ice it instead?

Judy you are spot on, as I was icing the Nico cake I did not make the syrup which I believe would counteract the dryness I found in that cake. While coconut ice frosting adds a lot to the overall cake. moisture is not one of the additions as the frosting ends up being very similar to coconut ice - quite hard and dry.  So I will definitely make the Nico recipe again using the syrup.  :)  :)

I made maddys coconut muffins the other day, and used this coconut ice frosting recipe to ice them.  It was yummy, but a little too sickly sweet for my liking.  Once I have some sour cream I will try making this version of the cake as muffins.  THanks for posting!

The frosting is certainly for coconut ice lovers of which we have many in this family.  Karen, going by the cake mixture, this recipe would be a moister muffin than the norm - have you tried Judy's post of Nico M coconut cake with the passionfruit syrup? - I think it would be wonderful as a muffin!!!!  :)  :)

Adding extra coconut to make it firmer, and then I piped it on with a big open star nozzle (you know the cheap plastic ones from the supermarket).

I'm thinking to make this for a BBQ this weekend - I've got some frozen butter icing left over from my daughter's birthday so would like to use this instead of the coconut icing. It's my daughter's first birthday so am wanting something simple to stick a candle on.

I don't have time to stuff up  :-[ which I often do - any thing to consider? Is the cake too moist/crumbly to ice with butter icing?

Johnro this is in the oven now. Going to use lemon juice instead of pink food coloring as DS can't have food coloring.
