Soffritto
Many Italian dishes begins with a sofrito
1 MC full of oil
1 large onion diced
Garlic diced i used about 10 cloves
1 large carrot diced
1 cup of celery diced
Hand full of parsley
Heat oil for 2mins on varoma
Add onion 3mins on varoma :-:
Add garlic 2mins on varoma :-:
Add carrot 3mins on varoma :-:
Add celery 2mins on varoma :-:
all at speed 2
Stir in the parsley ^^
Some sofritos have pork in it
I use this sofrito to start risotto, soups, Bolognese sauce, over grilled fish, beef, or chicken
I usually make a triple batch on the stove

Fundj, do you freeze this? If so, what size packs would be required for a normal recipe serving 2 people.

JD it depends what you are going to use it for.
I do freeze some of it it in the sandwich size zip lock bag ½ full.
If i was going to make bol sauce for 2 ,i would use enough to cover the bottom of the pan.

Very nice recipe :) I usually make sofrito without garlic but with green peppers and tomatoes as thats more or less the Spanish version. Never really done it in the tmx as i make too large quantities and i love to dice the vegetables with a sharp knife :)
Anyway as fundj said this is an awesome base for lots of dishes :)

Thanks CC, didn't think to look there. The reason I even became interested was because I have a whole head of celery to do something with and when googling recipes last night and seeing the word soffrito, I remembered fundj had posted one. Found a few recipes to use it up, probably need more than 1 head of celery though :D I usually just buy vegies that I need for a recipe & never a whole head of celery but I had a vegie box delivered last week and needed some more ideas. I love that you can come up with many different things to do with something you have never bought before or have an excess quantity of something. So much easier than trawling through countless recipe books.

Its usually not the head(i assume you talk about the root) of celery that is used for sofrito but the green part. Im sure you can use your head as well though.
Anyway a nice danish recipe that uses celery is meatballs in celery sauce. Which is meatballs which is added to a bechamel sauce.
First you dice your celery in small cubes and saute in a butter for about 5 min. Then add flour and make the rest of the sauce. When done add the cooked meatballs and serve with boiled potatoes or rice.

On page25 of the DD cookbook there is a recipe for Celery Cantonese that uses a whole head of celery.I tired it once,not that keen on the recipe but someone else might love it.

Thanks for the recipe bluesed, sounds good. No, I'm not talking about the root, it is all the green stalks attached to each other that we call the head here.

Well I have made a batch of this thanks fundj, ended up with a soup bowl full and will bag it up in the morning. Smells delicious.
