Title: So much beetroot salad

Please excuse this very basic tip, but if you find yourself with leftover fresh beetroot salad (EDC), just add cream cheese and you have a delicious dip.

Sometimes Cecilla the simple ones are the ones we don't think of ourselves (too obvious!!)  or we don't think to post as they are simple but really they should be as not everyone thinks about food the same  ;)

Oh, you three are so encouraging.  Thank you.  I must add, judge the amount to add to the cream cheese, though.  A packet of cream cheese only requires a cup or so of salad to make a nice dip, maybe even less. 

I wouldn't serve up beetrooty things three meals in a row to others in the family, but I might have a beetroot salad leftover-type bortsch for my own lunch with nobody looking on though.

I do lurve beetroot salad, but I tend to forget how much it makes.  Must halve the recipe when making it just for two!!

I adore anything beetroot and I will try this for sure.
