Name of Recipe: Chicken Caesar Burgers

Makes 8 largish burgers
Prepare earlier
1 batch of chookies no fuss rolls (http://www.forumthermomix.com/index.php?topic=4253.0) (once in oven to cook, place a tray on top of rolls, that has been sprayed with canola oil.......great tip chookie ;) )
OR
Stefs burger buns (http://www.forumthermomix.com/index.php?topic=10812.msg178529#msg178529)
Drizzling of ]Kerry's Ceasar Salad Dressing (http://www.forumthermomix.com/index.php?topic=2603.0) on each burger
Or any bottled ceased dressing...red Kelly's or Paul Newmans is nice.
Boil eggs, slice & set aside
Burgers
50g cubed parmesan cheese
1 small garlic clove
700g chopped chicken breast
handful flat leaf parsley leaves
1 slice of bread - torn
salt & pepper
bacon rashers
shavings of parmesan cheese
lettuce
Preparation:
Place parmesan and bread into jug, and chop on speed 8, few seconds. Set aside.
Drop garlic clove onto running blades, speed 7. Scrape jug.
Add parsley and chopped chicken to jug. Mince 30 seconds, speed 4.
Add in the grated parmesan cheese & bread, salt & generous pepper, and mix 30 seconds, speed 4.
Place greaseproof paper on a tray, and shape chicken mix into 8 even burgers. Wrap in bacon rashers, place on tray, and flatten with palm of your hand

Chill burgers in fridge for at least 30 minutes, before pan frying.
Spray both sides of burgers with rice bran oil spray, and pan fry on med/low heat for about 5-6 minutes per side.

(you can toast rolls (125c) in oven when burger is flipped, or in in pizza oven to toast)
Once both sides cooked through, place on a foil lined tray, cover whilst assembling burgers.
Butter rolls, add lettuce, the burger, drizzle with ceasar dressing, and top with eggs and little more dressing if you wish.

Maddy, these look great. Neat trick placing oiled tin on top.

Home late, so I chilled burgers for 15 minutes, added a small clove of garlic, and made them flatter - cooking for 3-4 minutes per side.
Used toasted kaiser rolls, and used Red Kelly's ceaser dressing (lovely Tasmanian dressings ;))
Dry pan fried rindless bacon. Much quicker.

I made these today for dinner tonight.We all loved them.

We had these tonight for the first time and everyone thought they were great. I only had 500gr chicken mince and made 6 smaller burgers.
