Macadamia Anzacs
90g rolled oats
100g plain flour
75g brown sugar
45g macadamias, chopped in thermomix
50g sunflower kernels
80g margarine or butter
2 1/2 tablespoons golden syrup
1 1/2 tablespoons water
1/2 teaspoon bicarbonate of soda
Put margarine, golden syrup and water into *:. 1 minute speed 2 at 60 degrees.
Add the bicarbonate of soda. 3 seconds on ^^
Add all the dry ingredients. 5-10 seconds speed 4 or 5. (You may need to scrape the bowl down)
Place teaspoons of mixture onto a greased tray and bake at 160 degrees Celsius for 20-25 minutes.
These can be made nut free.
The recipe is based loosely on one from The Australian Women's Weekly.

oats have gluten but apparently you can sub with ummmm amaranth? puffed rice crushed up? i forget! but anyway, no oats for GF!

i found it - quinoa flakes is what i have in my cupboard that i thought i could sub in!
i will try it some time soon and let you know how it goes for a GF version :)

I made a. Batch of these this morning with lots of help from DH. Actually he made them and I directed.

DH would have been pleased with his effort cookie, he will probably love being in the kitchen to relieve you of your duties for a while.
