I have just taken delivery of my Thermomix and would love the recipe for corn chips.

CORN CHIPS (BAKED NOT FRIED)
Ingredients
50g Parmesan cheese
1/2 tsp mustard powder
1/2 tsp ground paprika
190g polenta
Method
110g bakers flour
1 tsp sea salt
1 tsp baking powder
120g milk
50g oil
1 tsp *fish sauce (or Tamari or Worcestershire sauce)

Preheat oven to 170°c.

Place Parmesan cheese, mustard powder and paprika into TM bowl and mill for 10 seconds on speed 9. Set aside.

Place all ingredients except cheese mix into TM bowl and mix for 5 seconds on speed 6.

Set dial to closed lid position and mix for 2 minutes on Interval :: setting.

Roll out 1/4 dough at a time between two sheets of baking paper as thinly as possible.

Place on lined baking trays.

Sprinkle cheese mix on top of pastry and push by hand with a piece of baking paper. Score with pizza cutter into shapes.

Bake in an oven for 10-12 minutes until golden. Break apart and leave in oven until cool.

Make sure you roll these as thinly as possible, the outside ones were nice and crunchy but some of the inside ones were a little too thick and weren't as nice.  Makes 4 traysful so prepare them all before cooking them as they need to stay in the oven until cold which is a little hard to do if you are doing it in 2 batches.  I cooked mine for 12 minutes at least, maybe more.

Should have written it in, but do the rolling out in batches, the more the merrier...I think I did around four, and then you do manage to get them nice and thin...I bake them all, then put them all back in to the oven to dry out, all broken apart...they all were nice and crunchy!! good luck. ;)

Has anyone made these GF? If so would you just replace the Bakers Flour with more polenta or just use GF flour?? I'm new to all of this Coeliac cooking so any assistance will be greatly appreciated.

I think you could replace ground glutinous rice for 1/2 the flour and ramp up the polenta...let me know if it works ! ???

hmmm i'm not sure, i think bakers flour is higher in gluten than regular flour? might have to add a little xanthan gum, but i would try without firs tand see how it goes...

i havne't made them, too fiddly for me lol  :-))

I make them every now and then when my little helpers are otherwise occupied.  The best batch I ever made was when I forgot about them completely and left them in the oven "cooling" all afternoon.  They were so crunchy - yummo!!!

Made these today for the first time and they turned out well. 

I have an Aga so can't leave them in while the oven cools as it doesn't.... instead I turned them upside down at the end and cooked them for another couple of minutes.   i then left them on a rack to cool.   The mixture was a bit too dry before I kneaded it so I just added a bit of water.

Wow can't believe how long it has taken me to get around to this recipe!! My clever 12yr old reminded me about it today when he was using the TMX to crack some 'heirloom variety' corn that we grew and harvested for his chooks and asked me if he could make cornchips out of it?? I remembered this recipe was in the "school lunches" book and we just had to try it - at 6pm!! We love it - but will roll it a bit thinner next time. They are a bit more like crackers. Our heirloom variety of corn was white so we didn't get that nice yellow colour polenta would give but anyway it's a thumbs up here.   ;D
... served with White Bean dip and Savvy.  ;)
Tip: We used a triangle cutter and when placing each triangle on tray to cook made sure it wasn't completely flat so edges curled giving it the CC's appearance - the flavouring is spot on!!

I'm so glad this recipe is here.  DH has been asking about corn chips in the TMX.  We have a pasta roller so I'll give this a try today and report back.

Assuming I've done everything correctly ( :-))) I would not bother with the pasta roller.  Polenta is too grainy for it to hold together when being pushed through the rollers.  Much easier with baking paper and a rolling pin (and besides, my rolling pin is much closer to hand than my pasta roller  :-[).  That may change now I have a Thermomix though  ;D

My corn chips are baking in the oven now and I can't wait to try them.  I know DH will be thrilled to try some tonight when he gets home from work (he loves a midnight snack on Tuesday nights when he works late).

It is grainy. I made these last week they are yummy. They remind me of cheds those cheese biscuits. I used the pasta roller but I did roll them first with the rolling pin. The mix is delicate

Made these tonight for nacho's with the chilli con carne. I didn't add the cheese, mustard and paprika as there was plenty of flavour in the rest of the dish. I found rolling them easy with the Thermomat and baking paper. They were nice and think. I will make these again and use the advice provided here of letting them dry in the oven. I found that some weren't crunchy enough, but if I'd cooked them longer the others would have been burnt. Just trial and error with my oven at the moment. I'm going to love making these compared to store bought corn chips.

Maddy I bought a tortilla press home from the states last year and have not yet been able to buy masa flour where I live so it has not yet been used.....might have to try this!

I looked into buying a press as I now make my tortillas and they are yum.

Having googled & then had feed back from Chelsea there is still a lot of rolling after its been in the press, so it doesnt take all the hardwork away.
