It's tofu version of frittata, DS and DD loves this with tomato sauce. Yum...
Ingredients:
1 onion, quartered
1 garlic
1 small carrot, chop roughly
1 tbsp olive oil
1 spring onion, both white and green
2 egg, seperate
1/4 cup breadcrumb (made in TMX)
600gr tofu
100gr cheddar cheese, cube
salt to taste
Preparation:
Heat oven to 180oC
Put onion, garlic and carrot in the *:, chop at speed 7 for 10 second.
Add olive oil, cook for 2min, speed 1, 100oC.
Add the rest apart from white egg, mix until combined. I just beat the white egg by hand until soft peak form. Add to the *: and mix with spatula.
Pour into remakin or muffin tin (I used silicon muffin tin for 6 and two normal remakins), and bake for 30 minutes.
Enjoy!
Tips/Hints: This recipe can be halved easily and nice cold as well.

How would these work minus the cheese, for a lactose free version?

Maybe different flavour but I think will work without cheese.
