Post by: susie-81 on August 20, 2011, 06:48:57 am
I recently went to a thermo cooking class where they made the most outstanding jaffa custard but using rind of an orange, a lemon, dkf choc then going by the custard receipe. I didnt take notes to the quantities as im not a big jaffa fan, than i tasted it and OMG have never tasted something like that before in my life!!!!! Has anyone ever seen it made???

Hi Susie,  I made a similar custard this evening to serve with ILBs very easy chocolate cake which was fresh out of the oven.  I based the recipe on the custard in the EDC (milk, eggs, sugar and flour) omitting lemon rind etc then when it had finished cooking I added around 50g of Lindt intense orange chocolate and stirred it through for 1 minute on speed 1.  Probably not exactly what you were thinking of, but a delicious choc orange result all the same.  Hope that helps, Lainie.

Always very popular when I do it at demos.  I haven't heard of the lemon rind going in with the orange rind.  We do 60g raw sugar, 30g cornflour, orange rind.  Mill together for 25 secs at 10.  Then I add 100g dark choc. and grate up.  About 10 secs on 10.  Then 2 eggs, 500ml full cream milk - 7 mins at 90 degrees on speed 4 or 5 according to the card but our Branch Manager suggests speed 3.

Cecilia, I use the same quantities.  9mn, 90 deg, speed 3 works for a nice thick custard.  We have it cold:  so YUMMY!

you can also replace the chocolate with about 20g of a good cocoa powder  ;)
