Title: a chicken nugget recipe please?
Post by: Strawberries on August 13, 2011, 10:24:21 am
Hello, does anyone have a recipe for chicken nuggets my kids would approve of? I tried the EDC chicken hors derves, but they weren't very nice and my kids didn't like them.

they must be egg free.

Thanks,
Amy

I'm fine Frozzie, just having a very busy week with specialist appointments etc for DH and have eaten out 4 times this week - he is keeping up with the pace which is a nice change.

Yes, since going on different vitamins & minerals, there has been a marked improvement and we are currently enjoying the best run we have had all year.

Sorry to gatecrash your thread Strawberries.  The first time I made the Herbal Chicken Hors-D'Oeuvres I used some dried herbs as they suggested and I wasn't that keen on them but now I only use fresh herbs, omit the onion and only use spring onion.  Everyone, children included, love them.  If it is the cheese they don't like, you could use a tasty cheddar cheese instead but I always use the fetta. What was it about the recipe they didn't like?

I sometimes make my KFC revisited recipe and leave out the spices.  The GC love the crunchy coating.

Best one I've ever done was Nigella Chicken Nuggets. Marinate chopped chicken breasts in yoghurt. Coat with crushed Jatz biscuits and spray with olive oil spray. Place on a baking tray and bake in a hot oven for 10 - 15 minutes until cooked through.

Not sure about the egg free but I just use the mix from the chicken kiev minus the butter filling. You would just need to follow whatever process you usually use to dip before crumbing. I would think that you could just roll in the crumb without the egg dip.

I missed the egg free too sorry  :-)) I make them with out the egg, can use more breadcrumbs and a splash of milk or yogurt to bind them instead and then I use either milk. yoghurt, buttermilk, anything that is moist to dip before coating. Hope this helps  :)

we are always happy to help convert Amy, and once someone has held you hand to do the first one you will be away. Let us know if you need help  :)

p.s. I like this one because it is already cooked when you fry off the crumb coating so really quick and easy. I freeze them ready to fry for last minute meals.

kathryn do you freeze them with or without the coating???

both!!! depending on how I feel lol.

With out the coating you need to freeze them flat with something in-between the layers to make it easy to get apart. If they are crumbed it isn't so bad  :)

i just thought crumbed you would need to cook without defrosting otherwise the crumb would become soggy?? and if cooked straight away it wouldnt be heated right through before the outside is browned??

The favorite 'nuggets here are just:

Chicken diced
A bowl of flour, a bowl of milk/yoghurt (you can add some egg replacer if you want),
and a bowl of Red Rock Deli plain chips, parsley and some garlic powder, blitzed to a crumb in thermomix.

roll in each one, in each step, spray with oil, and bake.

They are beautiful!

Have you tried the chicken nuggets from Annabel Karmel's 100 top finger foods?  They are absolutely delicious.  The only use of egg is in the usual flour, egg, crumb process so if you can somehow crumb them without using egg then they would fit the bill.

Chookies KFC chicken crumb has buttermilk and I use small chunks of breast so they are like nuggets
