Burnt Orange Sauce for Duck
This is rather a classy sauce to serve with roast Duck.
2 Oranges
1/3 cup of Rice Bran Oil
Salt and Pepper
Do
Remove 8 strips of Orange peel from one of the Oranges and place in a saucepan on stove with the 1/3 cup of oil. Cook until the peel is light brown. It will continue to cook when removed from the heat so don't over cook.
Heat a hot plate and brush with oil.
While it is heating, peel both Oranges, removing all pith.
Cut each Orange into 5 slices, place on hot plate.
Cook until each side is slightly charred.
Place peel in oil and charred orange and salt and pepper into TMX and zap for 1 min. on speed 9.
The oil will form an emulsion with the orange. Spoon a little on to serving plate.

Looks yum Chookie - can you suggest an oil that might be used in place of rice bran oil?

Kayta, I tried it with EVOO but the flavor was too strong. There is an Asian version with sesame oil and a dash of Soy sauce. Any light flavored oil would be OK I haven't tried Coconut oil, but this maybe OK.

JulieO, it freezes quite well and you only use a little.

I've got some olive oil which isn't EVO and find that doesn't have a strong flavour so I may try and use that.
I've bookmarked this recipe to try when I defrost a duck breast I have in the freezer - my mouth is watering already ;)

Katya - I often use grapeseed oil instead of rice bran oil - it might work in this recipe.

Chookie, your burnt orange sauce was really lovely. I have frozen the left overs for another time. I think it would be nice with chicken too. Thanks for the recipe.
I cooked the duck in my pc, (only 20 mins cooking time.) :)

JulieO, looks yummy. How do you get the Turkey to look like this in the PC.? We are having Roast Turkey for lunch tomorrow but will be slow cooking in an oven bag. Hope it looks as good as this.

Chookie, what a dingbat I am. I meant duck :-)) :D :D. Have edited the post.
If you would like the recipe just ask as it was really lovely. The colour came from firstly marinating and then cooking in the marinade and other stuff (in the pc). It gave it the lovely golden brown look as if it had been roasted. :)
