they are going to be roasted today...............unfortunatly, they get to about the size of a golf ball and stop growing!! but there are loads of them! I think we planted the wrong variety this time...........my next option is leaving them on friends door steps and running away! The courgettes are mad this year, but I can find loads of recipes for them!

How about Capsicum and Green Bean soup  (http://www.recipecommunity.com.au/node/17433)
Green Capsicum and onion Relish (http://www.recipecommunity.com.au/node/17433)
Fish & Capsicum curry (http://www.lifestylefood.com.au/recipes/13624/fish-and-capsicum-curry)
Beef & Capsicum in black bean sauce. (http://www.lifestylefood.com.au/recipes/13389/beef-with-capsicum-and-black-bean-sauce)

Not all converted for the TMX but could be.

Dear joosmicra,

Not sure if your crop is still producing, but I thought of your post when I saw the following recipe presented on tele this am:

http://today.msnbc.msn.com/id/44486185 (http://today.msnbc.msn.com/id/44486185)

I think it's very intuitive to convert to TMX but haven't taken the time to write down a conversion yet.

Hope that appeals, along with all the other delicious-sounding suggestions made by other forum members already.

Why don't you let them ripen - they will be sweeter and you can roast them, pack them tight in freezer containers (in manageable portions) and freeze them for at least 6 months.

I made up some of this red pepper jam (http://www.myrecipes.com/recipe/sweet-red-pepper-jam-10000001084337/) last year and it was delicious.  (Didn't last long.)

we have only had one year when we  managed to ripen them, because we are fairly high up.......we just had our first frost yesterday, and we still have a greenhouse full of green tomatoes, so chutney may be in order.

As long as the frost is not too severe, you can keep some plants going with a plastic "tent" and a string of outdoor mini holiday lights.
