Peanut Plum and Oat Slice
Ingredients
225g plain flour
100g butter
110g caster sugar
60ml cold water
175g coarsely chopped roasted, unsalted peanuts - do this in the TMX. Take care you don't turn them to peanut meal.
60g rolled oats
60g butter
160g plum or any jam

Preparation
Blitz the peanuts and set aside.
Heat oven to 200C.
Grease and line a 20cm x 30cm tray.
Place flour, 100g butter and 1 tablespoon of the sugar in the bowl. Mix until like breadcrumbs.
Add water and  :: until it comes together.
Press into tray and bake for about 15 minutes.
Melt butter in bowl, add peanuts, oats, and remaining sugar. Mix on  :-: until it is combined.
Spread the base with jam and sprinkle with peanut mixture.
Bake for about 20 minutes. Cool in tray before cutting.

This is adapted for Thermomix from a recipe in WW Little Squares and Slices.

Nice to see your first conversion from the new book Cookie.  Looks great.

love having a layer of jam between the top and bottom flavours and textures. looks like I will be making this slice soon
