I have a 2L bottle of whole organic cream that it at it's "use by" date, and I was going to use it up making butter and icecream. If the cream is already at the use by date, how long will any butter that I make from it last??

I'm sure I've read somewhere on the forum that the older the cream is the better?!?! You might be in line for a great result. I suspect that storage time may be limited, but perhaps you could freeze some butter for a later date.

I always buy cream close to use by date to make butter and then freeze it It freezes really well. I just take out small amounts that will be used in a day or two. Never had a problem ;)

Once you have taken out the butter milk then the butter will last a while as its the butter milk that will make it turn bad. But as it is difficult to remove all the butter milk it would be best to freeze it. I love making butter and it never ceases to amaze me how easy it is with the TM

I was going to make butter tonight but all the cream at the supermarket was thickened- can you use thickened or will it not work ?

I have used thickened cream and it worked OK, but I dont think it was as good as the stuff made from the unthickened cream

Yes it will still work, I have used Thickened Cream and Pure unthickened cream. The thickened cream just has gelatin in it to thicken it where the Pure cream does not. Hope that helps.

I've made delicious butter very successfully using pouring cream from the supermarket, and I'd like to try some organic butter, but I can't find organic cream anywhere (other than the King Island, which is very thick). I don't particularly want to buy 2L because we are only a small family.
Does anyone know a place in Perth where I can buy organic pouring cream in 500-600g containers? I've tried the Boatshed in Cottesloe but they don't have it.

I never bother with use by dates. I make do with my nose. The older the better for butter even if it is past it's use by date. If it is on the turn then yogurt becomes sour cream. No waste.

I have not tried this. Don't tell me this recipe is also in EDC?????!!!!! I really must get my hands on this jolly book. AHHHHH!!!! It is certainly not in the German book. Hmmmf! :(
