Mixed Berry Jam Kisses
Makes about 13-15 kisses
Ingredients
60g butter
90g castor sugar
1 egg
70g SR flour
60g cornflour
½ teaspoon cinnamon
icing sugar for dusting
Mixed Berry Jam
1 cup frozen mixed berries
180g castor sugar
1½ tablespoons lemon juice
Preparation
Preheat oven to moderate. Prepare 2 trays.
Cream butter and sugar. Speed 3. 40 seconds.
Add egg, mix 20 seconds, speed 5.
Add flours and cinnamon and use :: until just mixed in.
Drop teaspoons of mixture onto prepared trays about 5cm apart.
Bake for 8-10 minutes. Cool.
Mixed Berry Jam
Place berries in a microwave dish (use a large one or it will boil over) and cook at 100% for 2minutes.
Add sugar and juice. Cook 4 minutes. Stir well.
Cook a further 4 minutes, but stir every minute.
Allow to cool.
Sandwich biscuits together with 'jam' and sprinkle over icing sugar.

I modified this from a recipe I found in a magazine. Not sure what one as I found the recipe in a pile of ones I wanted to try.

Look good Cookie. Are they like the "sponge Kisses" that people used to make years ago? My Mum makes them and then freezes them before she fills them with jam and cream. They seem to puff up a little while after they are filled.

No Trudy these are quite different from the ones years ago. They are very cake like and these are biscuity.

also I think another thing quite similar recip/name was "powder puffs" - but I don't think women powder their faces with those thingies anymore so no one would know what they are talking about.

I know what you mean Dede. I print off recipes for both my daughters as well as myself!!!!

I gave up on printing recipes as I had filled 2 folders and was on to my third. Just use evernote now to store the recipes. As it is also available as an app you can have your recipes with you all the time. When I'm cooking I just carry my laptop to the kitchen. Looking into buying a small netbook or tablet to use in the kitchen instead though. I've come to realise that I will miss the forum too much if I go on holidays so this way I'll still be able to log on via the netbook or tablet. A small price to pay to get my daily fix. ;D ;D

My husband bought me an iPad , it has come into it's own since Thermie came along and I discovered the forum. It's just a copy and paste into notes- I have over 200 recipes in there. Brilliant.
