Crisp Orange Shortbread
Makes approximately 16 but recipe can be doubled
Ingredients
100g butter, softened
50g raw sugar
zest from ½ an orange
175g plain flour
½ reaspoon baking powder
Turn oven onto 1900C
Place sugar into bowl and grind finely.
Add zest.
Add the butter and mix on speed 3 for about 40 seconds.
Add in flour and baking powder. Mix 1 minute on speed 4.
Turn the dough out and press together into a short,fat sausage.
Break off pieces and roll into a ball about the size of a walnut.
Place on a lined tray. Press down with something-I used an egg slice.
Place in fridge to chill for 15 minutes.
Bake for about 15 minutes. Cool on tray for 2 minutes and then place on cooling rack.

Trudy - Thanks for the recipe Cookie. I doubled the recipe to use up the other half of the orange etc. Next time I think I will cut the log instead of flattening the balls. I even went out and brought a copy of BBC Baking to have a look at the picture!!!!!

No wonder you are called Cookie. These look absolutely yummy. On our last day in London, DH took me to Fortum and Masons for morning tea. We had shortbread biscuits with the beautiful tea. Mine never taste this good, but I will certainly give these a go. Thanks Cookie.

Cookie came from my Dad. Among other things he often called me Cookie. When I was a lot younger.

Shortbread is a real weakness for me (and DS17) so will give this a go this weekend. Thanks Cookie1 - they look yummy.
