Spotted Dick:
Number of People 6-8:
Ingredients:
120g SR flour
60g sugar
60g butter
lemon zest from 1 lemon
1 egg
2 tablespoons milk
about 100g dried fruit
2 tablespoons golden syrup
Preparation:
Place flour, sugar, butter, and lemon rind in the bowl. Mix 5 seconds on speed 5. (until like breadcrumbs)
Add egg and milk.
Mix speed 3 about 10 seconds until mixed.
Mix in 50g of dried fruit, :-: few seconds only.
Place the rest of the fruit into a greased bowl that you can steam in. Put the golden syrup over it.
Pour mixture from the *: over this and spread gently. Cover bowl.
Steam for 1½ hours in boiling water.
Serve with EDC custard or icecream or cream or even all 3.

Tips/Hints:
I think this could be steamed in the varoma but I didn't as I was using the TMX for other things.

Cookie1 this looks fabulous. What does it taste like? I have never hear of spotted dick (well I have heard the name but didnt know what it was) I am interested to know more.
What kind of container did you use to steam it? Would you just cover a cake tin with aluminium foil and place this into a baking dish with water and cook in oven?

I actually used a steamer that you can buy (like for Christmas pudding). I put a cover of baking paper over it with a pleat for expansion or use the top of the steamer. I then boil about ½ large pot of water and put the steamer in. The water should come about ½ way up the pudding. Boil this for 1½ hours. If the water gets low add more boiling water to it.

Cookie, many thanks for this recipe. While in London and under the influence of Cornish Cream, I was shown a 'Pudding Sleeve". Just the thing for this recipe. Fortunately I bought one or was it 2 ? It fits perfectly into the Varoma. Will let you know how your recipe works in it. It is made by Mermaid.

I just googled it and it looks like a smooth pipe loaf tin. Very interesting. I used my old pudding steamer.

When I was a kid Mum actually called it 'spotted dog', I think she thought we would snigger at this name. She was right too.

I remember mum making Spotted Dick with suet.
Chookie, the pudding sleeve is exactly like the Milk Loaf Tin, but without the bumps. I reckon it could easily be used the same way in the Varoma.

MJ, my milk loaf tin is a lot longer, and different to the Mermaid one. But I think I would/could use the mermaid milk load tin in the Varoma. I rather like the idea of making a flat sheet of cake/sponge, covering it with jam, rolling it up and putting it into the tin and steaming it. Mermaid say that the tin should only be used in a steamer and yet the coating seems similar to the Milk Loaf tin. Any ideas ?

Judy, you are incredible the way you find recipes. Thanks. I would probably use butter ,or coconut oil, but about 1/2 .of what is recommended in the recipe.

It is not easy finding recipes for the pudding sleeve - Mermaid's website is 'under development' at the moment. When I got the pipe loaf tin there were 2 recipes that came with it, wonder why there were no recipes with the pudding sleeve. Any English lady out there that would be able to share recipes for this tin, it would be much appreciated.
Just had an idea Chookie - the older generation will remember the steamed fruit/nut cake mixture our Mum's used to put in 4 baked bean cans and steam in a large saucepan. Half that recipe should be just right for the pudding sleeve I reckon, must dig it out and give it a go.

Funny you should mention the jam roly poly Judy. I was thinking of making one this weekend and steaming it. I might still give it a go. I'll roll it in glad wrap or baking paper.

I have only ever tasted 1 roly poly Cookie and that was the one I made in high school over 50 years ago.

Mum used to make Jam Roly Poly and I have a similar recipe but for Butterscotch Roly Poly. I haven't tried steaming in the Varoma, but if it helps anyone here is a recipe:
Ingredients:
150g plain flour
20g butter
1 tsp baking powder
pinch salt
Sauce:
1 cup boiling water
1/4 cup sugar
few drops vanilla
1 tablespoon butter
1/4 cup syrup (probably golden)
raspberry jam, to spread
Method:
Rub butter through flour (do by TM), add other dry ingredients, mix with with approx 70g mik to make a firm to medium dough. Spread with jam, roll up and place in a baking dish. Pour sauce over and bake in a moderate oven for 30 minutes. Serve hot with custard.

Sure does. You could always steam the roly poly and then pour the sauce over after. It wouldn't be all lovely and cooked into it though.
MJ Mum used to use suet too. I might even throw caution to the winds (have eaten out far too much this week already so suet won't hurt) and use suet to make it.
