Does someone have a recipe to make cauliflower soufle? i have a recipe but the soufle did not come out very well and it collapsed immediatly.
Any suggestions?

I cant help you here stefbelgium as I have never attempted Soufle at all as yet, But I am certain someone on here will know the answer. I am interested to know my self as Cauliflower soufle sounds really yummy.

i think i have the right recipe here. The taste is very nice !!! you should try this:
cauliflower souflé
Ingredients:
750gr cauliflower (approx)
3 eggs
60gr parmezan
200 gr breadcrumbs
250gr milk
25gr buter + some extra
30 gr flower
nutmeg
Pepper and salt
instructions:
Put parmezan in blender - 1 min - speed 10 - put asside for later
Doe ½ liter of handwarm water in the bowl.
Cut the cauliflower in to smaller pieces and put in the varoma
let steam -VAROMA - 20 min - speed 1
Put the varoma aside and empty the bowl
Put butter, flower and milk in the bowl - 100° - 4 min - speed 3
Season with pepper, salt and nutmeg
Add eggyoaks, cauliflower and parmezan - 10 secibds - speed 8
Whisk the egg whites and mix them gently in another bowl with the mix
Take individal ramekins that are buttered and dusted with the breadcrumbs
Fill all forms with the mixture , up to a centimeter from the top
bake in a preheated oven 180° - 30 minutes
enjoy - i am making this today with a pork tenderloin, that i stuff with roquefort blue cheese. yummie

Looks yummy stef. One question though - you talk about mixing the egg yolks with the parmesan and cauliflower. And then you talk about whisking the egg yolks.... I'm wondering if the second one should be egg whites?
