Posted somewhere on this site the recipe was wanted, sorry can't find the post.
A Parkin cake is really a ginger cake, absolutely yum. I can email cousins in the uk for the recipe, but it wont be in TM format. Please let me know if you would like it.
I love Parkin cake.

if you can do that hally you can kill 2 birds with one stone, catch up with the relly's and get a recipe. Cookie is very adept at converting recipes and will do almost anything to make sure that her DH is a happy man ;)

nothing like chucking you in the deep end cookie ;D and BTW I did say "almost anything" ROFL ;D

Pre heat oven 160FF
Ingredients
350g oatmeal
175g srf
2tsp ground ginger
160-180g brown sugar (soft)
175g butter
300g golden syrup
100-120mls milk
2eggslarge
Mix oatmeal s.r. Flour our and ginger
Melt sugar, butter syrup
Mix melted butterwith flour mix and butter, add eggs and mix well
Mix really weel, put in oven fo 45 mins
Then reduce to ad lower temp 130 for 30 mins and leave for 1 day before eating

Almost anything CP63. DD is the one that tasted this, although I have no doubt DH will tuck into it too. Leftovers go to car club on Wednesday. ;)
