Title: Pea, Feta and Basil Frittata

Pea, Feta and Basil Frittata:
Serves 4-6:
Ingredients:

- enough cooked peas to cover the base of the Varoma tray
- 6 eggs, beaten
- 150g feta cheese, crumbled
- 2 stalks of basil, finely shredded

Preparation:

- mix all the ingredients in a bowl. season with black pepper

- wet some greaseproof paper and use to line the Varoma tray

- pour in the egg mixture and cover with lid

- fill the bowl with 1 litre of boiling water, top with Varoma and steam for 15-25 mins, Varoma temp, Speed 2

- start checking the frittata to see if it's cooked after 15 mins. Mine took a full 25 mins but my eggs were on the large side


This is one of our favourite meals - lovely with salad and delicious cold the next day

It does sound nice Brunette and so easy for a quick meal - another one for my pile of 'to do' recipes.

I made this for my husbands lunch today and he loved it.  I added capsicum and only had dried herbs so added basil and chives.  The only thing was that I added too much salt! With the feta being so salty I didn't need to add as much as I did.  Thanks Brunette for a lovely quick recipe.

This is a really nice quick meal when you've had a main meal for lunch.  DH asked what it was he was eating and I though he was going to say he didn't like it but no, he was thoroughly enjoying it.
I cooked the peas & corn in the microwave,  beat the eggs in the TM bowl then rinsed the bowl out, poured the egg mixture onto the varoma tray and just added the other ingredients onto that. 15 minutes was enough for mine. Only used half a packet of feta so that there was enough left to do something else with - 90g.

Brunette - thank you for dinner tonight!  This was the first frittata I have tried in the TMX - added a roma tomato . . but cooked to perfection to your instructions.  So quick and easy on a busy night and running a little late with things!! :-* :-* :-*
