Blueberry and Banana Yoghurt Mini Muffins
Makes about 40
Ingredients
1½ cups SR flour
½ cup sugar
1 cup greek yoghurt
½ cup mashed banana
1/4 cup oil
1 egg
1 cup frozen blueberries
Preheat oven to 1900C.
Grease or put patty pans into a mini muffin tin.
Combine flour and sugar in a bowl.
In *: place yoghurt, banana, ooil and egg. Speed 6 for 10 seconds.
Pour into flour mix and just mix together. Add blueberries and fold through. Don't overmix.
Put into prepared tin and bake for 12 minutes.
You will need to do this twice unless you have 2 mini muffin tins.

Brumington - They were really moist and tasty. I was asked if they were a package mix! Everyone loved them and I have had several requests for the recipe. I think this speaks for itself!

Lovely photo Cookie. I have the blueberries but may have to wait for bananas to come down in price a little.

I'm lucky I got some a while ago at about $2 for 3 or 4Kg. They were soft so I bought several bags of them and put them in the freezer. We can still enjoy banana cakes and smoothies but not fresh bananas.

I somehow overlooked this over the Easter break. Are mini muffins about the same size as cupcakes/patty pans?

A bit smaller CP63, but I see no reason why you couldn't make them any size you wish.
