Does anyone have a recipe for the carrot bran & walnut muffins that you can get from McCafe? My family love them.

Hi Lynnie, welcome to the forum. What are you like at converting recipes? Here's (http://rusticchef.blogspot.com/2010/04/carrot-and-walnut-bran-muffins.html) one that sounds easy enough to do in the TMX.

I converted this one today and they turned out great
CARROT, WALNUT AND BRAN MUFFINS
makes 12
100g walnuts
60g carrot, roughly chopped
85g butter
60g brown sugar
80g molasses (I used golden syrup)
1 egg
240g light sour cream or plain yoghurt
150g (1 cup) SR flour
1/4 teaspoon salt
60g bran
Turbo walnuts a few times, put aside
Process carrots 4 sec, speed 6 (leave in TMX)
Add butter, sugar, molasses, egg and sour cream, 20 sec, speed 5
Add walnuts, flour, salt and bran, 5 sec, reverse, speed 4
Spoon into muffin tin
Bake at 200°C for 15-20 minutes, until a skewer comes out clean

No worries Dede, let me know how it goes and if you can improve on it, as I'm new to converting recipes.
I have attached a photo. When I spooned in the mix, I thought it was too much for 12 muffins so I did a few extras - but next time I'll just do the 12 bigger sized ones. The ones in the front I left in for a bit longer and they were darker and had that nice caramelised golden syrup taste. Maybe using molasses they would have turned out darker also - not sure as I've never used molasses before...
