Title: Cucumber Lemon Spritzer

Cucumbers are cheap at the moment - I picked up a bag of 5 big Lebanese cucumbers for $2 then spent the evening trawling the internet for things to do with them.  You would be amazed at the options so expect a few recipes from me in this regard  :D :D

This is my conversion for the TMX

80g sugar
130g ice
200g peeled cucumber chunks
100g lemon (ends removed and cut in half)
1/2 tspn fresh ginger (from a jar works OK too)
700 mls mineral water or sparkling water.

Blitz the sugar 5 sec/speed 9.
Add the ice, blitz 5 sec /speed 10.
Add the cucumber, lemon, ginger & 200mls of the mineral water.
Set the lid to closed lid position and pulse 4 times.
Strain through a fine sieve into a jug and top up with the remaining 500mls mineral water.

This sound so refreshing JD. A little while ago I was given  Gin & Tonic that had cucumber slices in it and the cucumber add a new dimension.
