Title: Red Thai Chicken Curry - EDC - with photo

This dish was a winner in our household - I added a deseeded red chilli at the same time as the chicken (the end result was not in the least bit hot - we are in no way lovers of hot foods).  Another recipe for keeps!!!!! Cheers  :)  :)

We also love this recipe when we make the homemade red curry paste to go with it.  I have tweaked it a bit to give it some more flavour.  I add a kaffir lime leaf when making the paste (taking out the centre part of the leaf first).  I don't cook this in my TM as I make up a heap of it with lots of vegetables to bulk it out (carrot, brocolini, zuchini, baby buk choy).  I also add a little more lime or lemon juice when I am cooking it along with the extra kaffir lime leaves and add 1-2 tbls of fish sauce.  My ds (7) loves this so much he always asks for us to keep him some leftovers for breakfast (as he does eat it) ;D ;D

Some friends of mine made this with prawns instead of chicken (and the homemade paste), and said it was amazing!! That was one of their first meals cooked in their new Thermy, and they said it was 'restaurant quality' and were so happy!!  :)

Must try this one. Looks yum. There are so many recipes to try. Dont think I will ever get through 1/2 of them.

We love this one too.  A definite regular in our house as well.  The homemade paste is amazing (fabulous in the Thai Sweet Potato and Lentil Soup as well). 

Going to try the prawn idea (it seems so obvious now that you mention it!).  Thanks Jo  :)

I wanted to make this dish but baulked at the idea of using a store-bought curry paste as I've never found anything like that from a jar to be any good.  How do I find the recipe for the home-made curry paste that you all refer to?

Sorry if I'm missing something obvious, I am new today  ;)

Thank you!  Geez I'm stupid!  I read the chicken curry recipe and when it said 100g curry paste, I  "AssuME d"  it meant from a jar.  D'uh.  Doing a happy dance now cuz I can make me own from scratch  ;D  Thank you

Making ths tonight  instead of laksa, a bit too hot for laksa.

I have the  paste in the freezer, so easy. Using snow peas & beansprouts as i have them already. Will add additional chilli & corriander too.

H :)

Just finished, havent made this for ages, we forgot how good it was. I added extra chillis in the last session of cookimg. DH taking a portion to work for lunch. Yum

Yum, this was really nice and authentic, the paste was enough to make 5 dinners! I have frozen the remaining 4 portions for quick meals later on. I added kaffir lime leaves to the paste too plus lots of coriander at the end. Can't wait to try with prawns next time.

The recipe in the EDC says to use 600g of chicken - could I possibly up the recipe to 1kg of meat for the same amount of sauce??  Please help! Angela

Angela, I don't think the TM would cope well if you upped the chicken to 1kg. The limit the TM can hold is 2 litres and the extra chicken may just push it above that mark.

Anyone else have other thoughts?

This dish is standard with us now...love it!! We use 30 gm green paste and that's just perfect for us. If we don't have chicken it makes a lovely vegetable curry.. Simply replace chicken with the same weight vegetables... I find root vegetables work best in place of the chicken.   Carrots used to replace the bamboo shoots make for a nice sweetness,too.

To answer your question I can categorically say... Keep to the 600 gm.!!  I tried 750 gm once and it simply does not work!!

If you need that quantity of curry I'd be making it in two batches.
