Name of Recipe:Zucchini & Pork Quiche - see photo here (http://www.forumthermomix.com/index.php?topic=4525.60)
Number of People: serves 4 with salad
Ingredients:
1 tblspn veg oil
130g onion, cut in half
1 apple, peeled and cored
160g zucchini, cut into chunks
100g diced roast pork (1 cm cubes)
120g tasty cheese, 3-4cm dice
100g plain flour
75mls veg oil
2 sage leaves
handful parsley leaves
4 large eggs
S & P to taste
Preparation:
Chop onion 2 sec/speed 5. Scrape down sides of bowl.
Add apple and chop 1 sec/speed 5. Scrape down sides of bowl.
Add oil, saute 4 mins/100o/speed 1.
Remove contents of the bowl to a large dish.
Add zucchini to the bowl and chop 3 sec/speed 7. Add to the onion mixture.
Place sage and parsley into the bowl and chop 2 sec/speed 7.
Add the eggs and mix for 3 sec/speed 7.
Return the onion/zucchini mixture to the bowl along with the rest of the ingredients.
Mix for 30 sec/reverse/speed 1.
Spray a 23cm quiche dish and pour the mixture in.
Bake 180oC for 40-45 mins.
When a skewer comes out dry, it is ready.
Tips/Hints:
You could use chicken, salmon or canned tuna.

dede - Judy the quiche was fantastic. Nearly everyone ( except the 2 fussy little ones) loved it. 5 out of 7 people is pretty good. Definitely will be making it again. We had fried rice with the quiche. I probably would of preferred a salad but am a bit short on salad ingredients till shopping tomorrow. But any way it was a great way to use up some of the left over pork. Thanks again. 5 out of 5 from me.

Glad you enjoyed it dede. I didn't post the recipes at the time because I didn't think there were that many pork eaters out there but I find 1 piece of roast pork can last the 2 of us all week with different leftover dishes that are a bit different than usual.
