Title: Beef & Celery with Sundried Tomatoes

Name of Recipe: Beef & Celery with Sundried Tomatoes
Number of People: Serves 4
Ingredients:
1 small onion cut in half
1 clove garlic
1/2 red pepper (60g) cut in half
180g celery, sliced on the diagonal 2cm thick
1 tblspn vegetable oil
400 - 450g lean beef 4cm cubes (I used blade steak)
2 tblspns flour
S & P to taste
100mls red wine
100mls beef stock
1/2 handful fresh basil leaves or 1/2 tspn dried
2 tblspns tomato puree or 1 tblspn tomato paste
4 sundried tomatoes, chopped (25 g)
1 tblspn cranberry sauce or redcurrant jelly

Preparation:
Place onion, garlic & red pepper into the TM bowl and chop for 2 sec/speed 5.
Add the celery and saute 5 mins/varoma temp/reverse/speed 1.
Add beef and saute 5 mins/varoma temp/reverse/speed 1.
Sprinkle the flour evenly over the top, add S & P and saute 1 min/90oC/reverse/speed 1.
Add wine, stock, basil, tomato puree, sundried tomatoes & cranberry sauce.
Cook for 45 mins/90oC/reverse/speed 1.

Thicken with cornflour/water paste if gravy is too runny.

I like to do casseroles like this earlier in the day to give the dish a chance to really develop the flavours so I made this in the morning, refrigerated it then reheated it in the microwave that night.

Recipe adapted from a Miele Steam Oven cookbook.

JuliaC38 - This was delicious and very easy to make. I was lazy so just zapped some frozen peas/corn as a side tonight. Will be making again - meat very tender!
ETA: I didn't have cranberry sauce or redcurrant jelly, so just omitted it with no problems.

Thanks JD - a non-chicken recipe  :-* Don't think I have ever had those beanie things on the side of the plate - are they broad beans?

Yes CP63, frozen ones and then I peeled them.  They pop out of their skin easily enough but you can't leave it to the last minute to do, takes a little while.  They are lovely though - if only someone would peel them for us.

I would think so CC, much less cooking time though.  My blade steak was really tender at the end of 45 minutes.  I thought I'd have to cook it an hour at least but this wasn't the case.

Wow JD this looks awesome. I read the title and thought I would have a browse but no real intention of cooking it. The photo speaks for itself and I'm sold so it's on next week's meal plan. Did you cook the broad beans and carrots in the varoma - when did you add them? Is this TMX potato that you cooked after the Beef? I want to write it out as a whole meal rather than just the casserole portion so would appreciate your comments.

Twitterpated, I like to do casseroles like this earlier in the day to give the dish a chance to really develop the flavours so I made it this morning, refrigerated it then reheated it in the microwave tonight. You could make it and place it in your thermosaver whilst cooking the vegies. I cooked the diced potato with the carrots on top of them  in the steaming basket and whilst they were steaming for around 20 mins, I microwaved the broad beans then set to and peeled them.  I just gently reheated them in the microwave at the end. You could reheat them in the varoma dish whilst the potato is cooking though.

I have heard of them, and know they are really super easy to grow....but I have never tasted them, and no one has ever put them on a dish in front of me. I always tend to buy runner beans which I love. I think my kids would think they were big flat peas if I bought some  :D

Me too.  I love it when older recipes are bumped. Hopefully on the menu for this week, if it isn't too hot.
