Title: New York Bagels (with photo)

New York Bagels

Ingredients:

Bagel dough
250g water
25g honey
20g fresh yeast
550g bread flour
10g salt
1 slightly beaten egg (approx 50g)
15g melted butter (cooled at room temperature)


To boil
Boiling water
1 tbsp honey

Top
1 slightly beaten egg white
Sesame, nigella, poppy, anise seeds... etc



Preparation:

    * To prepare bagel dough, put water and honey in TM Bowl and warm for 1 minute at 37ºC on Speed 2
    * Add yeast and mix for 4 seconds on Speed 4
    * Sift in flour. Add salt, beaten egg and melted butter. Knead for 5 minutes
    * Transfer it into a bowl, cover with plastic film and let it rise for 1-1.5 hour

    * Press the air out, divide into 12 pieces and roll each into a ball shape (each will come around 75g)
    * Let them rest for 5 minutes

     * Flatten them a little by pressing with the palm of your hand. Make a hole in the center with your thumb and stretch them a little with your hands making the hole larger (it's better to have larger holes since the dough is quite elastic and they tend to get smaller)
    * Place them in the floured tray
    * Cover with a clean tea towel and let them rest for 15-20 minutes

    * Bring water into boil in a large pan, add 1 tbsp of honey and mix
    * Add bagels one at a time. Cook 30 seconds each sides.

    * Put in a drainer (not paper towel cos it sticks)

    * Cover baking tray with baking paper and brush with a little oil
    * Place drained bagels in the tray
    * Brush with beaten egg white and sprinkle with some seeds as you wish

    * Bake in oven preheated at 200ºC for 20-25 minutes
    * Let them cool on wire racks

I enjoyed using dıfferent seeds by the way
They enrich and vary the taste.

Thank you farfallina - I have made Brazen's Bagels (http://www.forumthermomix.com/index.php?topic=3217.0) which I absolutely adore, and will give yours a go as well. I had only tasted about 1 or 2 bought ones before I tried making them, but up until then I wasn't that fussed...now its a different story.

I made Brazen's bagels too CreamPuff
They are so delicious  :o
Since I had this book with bread recipes I wanted to try this one
You know I like trying new and different stuff ;)

What would you say was the difference between yours and Brazen's Farfallina?

Katya I can say that they are very similar
The quantity is a little different.
I made 12 bagels. If you like them thicker you could try to make 10 bagels
When I made brazen's ones I got unlucky because my oven got broken.  :-\
They luckily turned out well, they tasted good, the problem was they didn't get brown as they were supposed to so I can't give you an exact answer.  :-))
At the end I was very satisfied also with brazen's version
I made this one just to try a new recipe
No matter which version of bagels you make I'd recommend to use some seeds. Different seeds give a nice touch for both the look and the taste

Thanks Farfallina.   I love sesame bagels.   When I go to New York my nephew buys me sesame bagels and he buys "everything" bagels which have all sorts of seeds, including black onion seeds.  I find they taste too strong and he now knows to make sure my sesame bagels are wrapped separately so they don't get polluted by the onion seeds  :D

Bagels are usually very time consuming to make. Used to go to  fantastic bagel stores when living overseas (Noahs bagels )and they had the best toppings you could buy to put on your bagels too. I used to love a strawberry cream cheese one they had. Apparently it was just cream cheese mixed with strawberry jam.
