			- 
				Cranberry and Coconut Biscuits 
Makes about 30-35
Ingredients
160g icing sugar, made in TMX.
200g soft butter
½ teaspoon vanilla extract
1 egg
65g dried cranberries
40g shredded coconut
260g plain flour
½ teaspoon carb soda
Method
Make the icing sugar if not done before. Leave in bowl and add butter, and egg. Mix speed 3 for 1 minute.
Add cranberries and coconut. Mix on  :-:,speed 1 for 7 seconds  or until mixed.
Add flour and soda. Use  :: for 20 seconds to mix.
Bake at 1700C for 12-15 minutes. Cool on tray.

CP - made these today and they are lip schmacking good! ta very much cookie - really easy and definitely one that I will make again and again. (I put the vanilla extract in with the butter and egg ;))
em - what a great recipe. I substituted some smashed up chocolate pieces and they were beautiful.

				I've been banned from making Dede's chocolate chip cookies :'( DH and DS said they just couldn't leave them alone.But these look so good that I might smuggle some out to share with friends.I have a pastry recipe somewhere which you add icing sugar,makes the dough very "short".Thanks Cookie.

				they look really good cookie. I have some shredded coconut that I made something with recently and was looking at blankly today, but now i have to buy some cranberries - what I have to do in the name of taste testing  :-))

i made these for afternoon tea, but didnt have the cranberries so i substituted sum smashed up chocolate pieces and they were beautiful.

				Made these this Labour Day arvo.  Got phone call during butter & sugar mixing stage ... therefore egg only went in with flour & bicarb...  oooops .. they seem to have come out OK though :)  Have lots of sympathy for MasterChef contestants, if you can leave out an ingredient during the method stage WITH a recipe, then I can see how easy is it to leave out when you are winging it from memory!!!?
