Does anyone know the kneading capacity for the TMX. I'm wanting to make a loaf to fit my pullman tin but it requires a dough of around 2 1/4 lb in weight. I KNOW this would be too much for Thelma but I'm happy to split it in half as long as she can cope with around 1 lb - can she? Anyone know??

Hi Nik
A lot of the bread recipes use 500g flour which is equivalent to 1 lb. so I guess the answer to your question is "Yes" 8) 8)
Is 2 1/4 lb the finished weight of the dough? If so, by the time you've added oil and water and whatever else to the flour, it would take you close to that weight so you may be OK to do the whole thing.

I'm going to give it a go - apparently its quite a "wet" dough which should be easier for the machine to handle. The recipe calls for 640g of flour ...

Just yesterday some one at the Portuguese forum said the capacity of the Thermomix was 600g of flour. Maybe you should check with your consultant.

I'd ring UK Thermomix Office to check Nik. I wouldn't want you to cause damage to your machine by overloading it.

In MYOC page 23 on kneading it says "don't use more than 700g of flour for your dough?Do two batches, one after another, if more is required"

Well, thank you very much CC - that was exactly what I needed to know.
Will post photos of the loaf when complete :) Since its a white one I'm hoping to get it baked today for dh - I can't move him away from his white bread!

No, I just did it in one go - it was fine. The recipe calls for scraping and kneading blah blah, but I just used the TMX - I set it to knead for a minute at a time.
It's not going to last long - 1/2 gone already!

Gorgeous pullman loaf Nik.
Although I rarely use my TMX for bread, as I have a dedicated dough mixer, I am going to try this one. It has been a while since I made a pullman loaf so I will get out the pan, dust it off and give it a go.

I've made the Herb and Garlic pullapart bread from the Festive Flavour cookbook and it calls for 750g flour and that wasn't a problem.

On the magnetic card (summary table for basic functions) that comes with the Australian EDC it says maximum 600g flour for bread or 750g for a more liquid dough :)
The info should from memory also be in the basic section of the EDC.
My brain isn't working to well this morning so I don't know what the finished weights of the dough would be ???
