Title: Rara's Pancakes

A Sunday ritual for the kids.

Rara's Pancakes

50g unsalted butter - cubed
350g S.R. flour
60g caster sugar
2 eggs
500g milk
1 tsp vanilla extract


Place chopped butter in TM jug.  Melt for 2 minutes, 50c, speed 1.
Add in the rest of the ingredients, and mix for 30 seconds, speed 5.
Scrape down jug, and mix a further 30 seconds, speed 6.
Let the batter sit for at least 30 minutes.
Add a dot of butter to non stick pan, and cook on low heat.  Wait til mixture bubbles, then turn over.

Makes about 1 lt. of batter......or 8-9 large pancakes.

Had these for dinner with butter and maple syrup. Big hit with the whole family! Used Wholemeal Sr flour and still yum (I'm not a big fan of Wholemeal flour).

Having leftovers for breakfast!!

  :) How good is this forum? My DS asks for pancakes this morning that i have never made before. I jump on the forum type in Pancakes and up comes this fabulous recipe from Rara!! They were such at hit, thankyou. Made alot, might halve the recipe next time, but now i have to buy maple syrup for next time we have them. Love Jenny  ;D

Yes, as it's Pancake Tuesday (Shrove Tuesday) we were really bad and went to McDonald's for pancakes before school. It's a real treat for the kids because we NEVER have Macca's meals, only the very occasional breakfast or soft serve. Even with this great recipe, I don't think I would have had the kids at school on time, so for us, it's definitely a weekend breakkie.

.....and tomorrow fish as it's Ash wednesday

I make the batter the night before so its nice and thick.
It takes about the same time to fry or poach an egg in the morning.

Seeing it's Shrove Tuesday we'l have pancakes for sweets tonight. I think maybe blueberry ones with maple syrup would be nice.

My 2 x Teenage DS's really liked them.  Although I require a Dairy Free for 1 DS so swapped the butter for Nuttelex and the Milk for Soy.  I did add an extra splash of soy milk which I find quite normal when converting from Milk to Soy and adding to flour.  And they looked like the picture!

My DS  has a friend over for a sleep over, jumped on to breakfast ideas and they voted for these, they look yummm.

Thanks - so quick & easy.  I ground up 50g of almonds & 50g of buckwheat and substituted this for 100g of the flour which gave the pancakes a nice nutty flavour.  Also, I forgot to grind my raw sugar first into caster, so just used raw and it was fine.  Couldn't manage to get a picture of the cooked product as they were eaten before I could get a photo of the nice stack  :-))  Made about 15 medium (child friendly) sized pancakes.  Yum  ;D

Thanks Rara - made these when visitiors popped in very early yesterday for breakfast after rowing - served with yoghurt and choice of raspberry sauce or EDC stewed rhubarb/apple and stawberry (both substitiutuing maple syrup in the cooking instead of sugar).  Those who preferred savoury type breakie, including me had these pancakes topped with bacon + eggs drizzled with maple syrup - so delicious.  I can't believe that I have not used your recipe until now - thanks so much  :)  :)

Made these again this morning but didn't have enough milk, so made some rice/cashew milk beforehand and used that instead.

Hally, just google pancake maker - there are varying prices and makes around.  A crepe maker is different to the pancake maker- I have the type you dip into the batter.  Check them out, they are really handy to have (I don't have a pancake maker, we are not a real pancake loving family) and a batch of crepes can be frozen and filled with leftovers just like the pie maker.  Just put them on your birthday, Christmas list  ;)

judy what brand is yours? I use a crepe pan but need to swirl the mixture, I'm pretty good at it as I've been making them this way since I was a kid (no thick pancakes in our house) but would love to try one of the dipping ones but have never seen them in the shops.

Wonder, mine is around 34 years old (Sunbeam) - it comes with a dipping dish and you just dip the teflon coated crepe maker into it.  I probably get around 20 crepes each time, so it doesn't need to be used very often as I just freeze them in packs of 4.  There's a knack to removing the crepe but you soon work it out.

This (http://www.amazon.com/Nordic-Ware-French-Crepes-Dipping/dp/B000TTKQIS) is similar to what mine looks like so I'd try you local homewares shops to see if they have something similar or even try op shops.  They never wear out and fads come and go.  I would never get rid of mine though, I love it.

Thanks Judy. I'll keep my eyes out. I love the pan I've got and have it it for years, it was the best $13 I ever spent so I don't really Ned anything fancier but like the sound of the dipping.

Whipped these up for morning tea for my two sick and extremely cranky children. Loved how thick the batter was, have never been able to perfect the 'hotcake' before now!! The kids loved them too, and heaps left over for the freezer (I only did pikelet sized ones).

These are what we'd call American pancakes. I think what we call a pancake is a crepe to you with no raising agent.

English pancakes or crepes:

4 ozs plain flour, 2 eggs, 7 fl ounces milk, 3 fl ounces water.
Sift flour add eggs and liquid. Beat well and allow to stand before cooking. Doesn't matter if you make immediately.
Makes 8 to 10 depending on thickness.

Tried this recipe last week and loved it. I like fruit in ours so added a drained tin of mixed berries in syrup, also added thin slices of banana to each one during cooking. The addition of berries gave you a sweet, juicy, berry flavour when you bit into one. Very deliciously and couldn't stop eating them.

Finally made these tonight and they are fab and very deserving of the accolades. Served with a caramel sauce (low fat ;)) and wattleseed icecream. Delicious. These are the ONLY pancakes we will make from now on. Thank you :)
