Hi,
Recently moved to Mexico with my family. I got my Thermomix a couple of months ago as a beautiful present and I'm looking forward to learning as many things about it as I can, especially about healthy cooking since I'm diabetic. I'm convinced that healthy meals don´t have to be boring meals and that my Thermomix can help me have healthy delicious food.

I'm in southern California but most of the boardies are in Australia.
Everyone here is extremely friendly and helpful so ask any questions you think of. Someone will be sure to have an answer.

I also am always looking for more regional Mexican recipes. My closest neighbors are originally from Durango and we have been trading recipes for years.
Currently we are both looking for a new recipe for Birria - one that combines pork and goat meat. On their last visit to Mexico they had a meal in Monterrey that included this dish but Celia was unable to convince the cook to give her the recipe and she has been unable to duplicate it since then. It is cooked in a large covered cazuela with the lid sealed on with dough.
