Title: Brandy butter

Hi all!
Need a brandy butter recipe please. 

I know it's icing sugar, butter and brandy, but dunno where to start with quantities.  Don't want to make loads.  Just enough to have a bit with fruit mince pies.

From WW magazine this month

250g butter
1.5 cups icing sugar (240g)
80mls brandy
Beat butter & sugar until smooth and creamy.  Add the brandy and beat for a few seconds or until combined.
Suitable to freeze

Great timing the_vermins....I just came on here to search for a recipe for this too! 
I'm going to add the zest of an orange into mine.   Off to give it a whirl now....will let you know how it goes!

Can you girls tell me exactly what brandy butter is used for or on :P :P  Does it replace brandy custard or is in addition to that?

JD - I use brandy butter with warmed Christmas pud instead of brandy custard.  Some Christmas meals I've been to have offered a choice of custard or butter.

I find the standard brandy butter recipes too sweet and add lemon juice and grated lemon zest to mine (orange juice will work well but I think lemon is sparkier) and make sure the butter is really cold.  It provides a lovely contrast to the very sweet pudding.

Worked beautifully with the orange zest in it.  Thanks JD for the quantities of the other ingredients!  I just put raw sugar and orange zest in first, blitzed it on speed 9 for about 20 secs, then added the butter, speed 4 for about 30 secs, then added brandy, speed 4 for another 30 secs, popped it in a container and back into the fridge to firm up again.   We have it with fruit mince pies and plum puddings.....yum YUM!!  :)

Thanks for asking what to do with brandy butter JD, I didn't really know either  ;D

I like the idea of cutting it with some citrus too.  I'm thinking I will make some to take with me to Melbourne and give as a gift to the hostess (my SIL).

My pleasure O2K.  When I read the request I remembered seeing the recipe in one of the pile of December magazines I bought but then had to find out which one :-))  Luckily it was the 3rd one with a decent index, some of the others lump all the Christmas cookery together and don't list every recipe which makes it hard to find things.  I am currently going through them all again and making my own index of things I think are worth doing.

YUM. I just made this tonight to have with mince pies and it is deightful. Just did the basic one. Used 140g sugar and it is beautifully sweet.
