Name of Recipe: Melon Soup
Number of People: 6
Ingredients:
1kg melon
50gr bread crumbs
100gr fresh cream
0,5 L sparkling water
Preparation:
Pip the melon and add the pulp into the bowl. Add the rest of the ingredients and blend for 2 minutes, speed 9. Place in fridge for a few hours.
For a little extra, add finely chopped Parma ham into each serving bowl. delicious. :-* :-*

Sounds very refreshing.
Does the leaving in the fridge for a few hours help with taste/consistency?
Could you add some ice cubes or freeze the melon to speed up the process of cooling? ???

Afternoon Thermomixer. Leaving the soup in the fridge, obviously makes it chilled. It's a summer recipe, to help us cool down. It remains the same in thickness, before or after being placed in the fridge. Also it does not change the taste.
Never freeze melon. It kills the taste, completely. As we all know, melon has a mild taste, so better to use only fresh ones. I would change some of the sparkling water to ice so that it is cooled, when served. The bubbles from the water will stay after coming out from the fridge.

Do you use canteloupe/rock melon, watermelon, Piel de Sapo or another type of melon ?
I have frozen canteloupe "successfully" (at least I thought there was still good flavour) just before blitzing for sorbets and ice creams. They were pretty ripe and full of flavour before they went into the freezer though.
I really like the idea of the fizz from the sparkling water - great idea.

I made this as a starter for a dinner we were having tonight. Here are my variations:
1 rock melon seeds and skin removed cut into chunks
250 gms natural yoghurt
2 cm piece of ginger peeled
salt and pepper to taste
pinch of Cayenne pepper
juice of one orange
Place ginger into bowl and grate speed 8 for 5 seconds
Put half melon into bowl with yoghurt blend on speed 8 for 20 seconds. Add remainder of melon and blend for another 20 seconds.
Add salt, pepper, cayenne pepper and orange juice mix speed 5 10 seconds
Chill for at least one hour in fridge before serving garnish with fresh mint.
