Title: Chocolate surprise puddings in Varoma

I really want to do these from the full steam ahead cookbook for Xmas. I have 12 people for Xmas lunch. Can anyone suggest a steaming time for 12 puddings. I want to use the silicone cupcake molds you can buy from homeware stores. The recipe on the book is for 4 portions and it suggests adding 5 min to the cooking time if you double the recipe. What should I do for 12 ?  I have done the recipe for the standard 4 people and it works really well. It is such a festive recipe especially with the marzipan!!

Thanks for that. I remember seeing that post by QC but had totally forgotten about it. It looks like you roughtly add an extra 5 minutes for every extra 4 portions. I'll give it a try and make a batch before Xmas anyway just to try them out.

I haven't made them but I would say 20 minutes. It takes 20 mins on varoma to do the steamed puddings for the varoma demo and that is 12 silicone moulds. You could speed it up by putting boiling water in the TM bowl rather than tap water. I think also because they are slicone rather than ramekins they will cook a little faster. Best to try the recipe first. All in the name of research of course.

Yes, I would say 20 mins - but I think it's best to start with cold water, as they rise as it warms... could be wrong, just haven't tried it with boiling water with cakes.  If you do, let us know how it goes!  :)

I have done it once with boiling water Jo and it took 15 mins  ;)

It was about 6 months ago but if I remember correctly yes ;)
